When it comes to bread recipes (machine or manual), the flour measurements are just a good guess (and sometimes they're not even "good"). Gluten amounts in flour will vary from bag to bag and brand to brand; and gluten is a main determinate for proper hydration. If your flour is stored in the bag in a humid kitchen, then there will be more moisture in the flour than someone who stores flour in an air-tight container in the dry environment of the freezer/refrigerator - as a secondary source for some hydration. If you change the type of flour called for in the recipe - from all-purpose to high-gluten bread flour (or vise versa) - or you substitute part of the high-gluten flour for a low-gluten flour (rye, spelt, kamut, barley, oat, etc.) - you'll also need to alter the hydration. As others shared, you MUST check and adjust the hydration as needed. Start checking it about 5 minutes into the mixing/kneading. You want the dough to be formed into a soft, sticky ball. A solid ball is going to be too dry. When you touch the dough ball with your finger, a tiny bit should stick to your finger. A dry or stiff dough ball will result in dry bread just like making bread by hand. You can also switch from sugar to honey and you may find you have a crumb that is more moist. I'm another who never bakes in the Zo - it's just my main tool for mixing and kneading. I won't even let the dough rise in the machine - I'd rather control that in a dough rising bucket. Sometimes I want a long slow cool rise, which you can never get in a bread machine. I use freshly-milled flour, so allowing a timed rise in the bread machine tends to over-proof the dough. Freshly-milled flour doesn't have the extensibility commercial white flour has. Bread machines were designed to use commercial flour in them, and I never use commercial flour. I've used coconut flour a bit. Many of the coconut flour recipes I've seen use *a lot* of eggs. Not a problem for me but might be for others. The texture of the cupcakes I made was interesting - dense, but light. I need to do more experimenting, but it is a very expensive flour. Here is the *best* and easiest GF Bread recipe I have ever made. You would hardly know it is gluten free. Gluten Free Focaccia Ingredients: ● 1 1/2 tsp dry yeast ● 3/4 cup warm water ● 1 tsp sugar ● 1 cup brown rice flour ● 1/4 cup potato starch ● 1/4 cup tapioca flour ● 1 1/2 tsp xanthan gum ● 1 tsp unflavored gelatin powder ● 1 tsp dried rosemary ● 1/2 tsp gluten-free onion powder ● 3/4 tsp salt ● 2 large eggs ● 2 Tbs olive oil ● 1/2 tsp cider vinegar ● ● Topping ● 1 tsp seasoning (Italian, herb, whatever) ● 1/4 tsp salt ● 1 TBs olive oil Directions: 1. Preheat oven to 400 degrees. 2. Dissolve sugar in warm water. Sprinkle yeast into water and stir until dissolved. Set aside to foam, about 5 minutes. 3. Combine flours, xanthan gum, gelatin powder, rosemary, onion powder, and salt in a small mixer bowl. 4. Whisk eggs, olive oil and vinegar into the dissolved yeast and stir the mixture into the flour. 5. Beat dough with mixer for 2 minutes, using a spatula to keep stirring down the dough on the mixer beaters. The dough will be soft and sticky. 6. Transfer dough to an 8 x 8 or 9 x 9 inch non-stick pan coated with cooking spray and cornmeal. (I usually line pan bottom with parchment) 7. Brush top with olive oil, sprinkle with salt, and season as you wish (I use thyme) 8. Cover and let rise in warm place for 40 minutes. 9. Bake for 15 minutes. Yum! Off topic - my fab Candied Ginger Gluten-free cookie. Ingredients: * 1 cup Unsalted Butter, slightly softened * 3/4 cup Brown Sugar * 1/3 cup White Sugar * 2 Eggs * 1 tsp Vanilla * 1 cup Sorghum Flour * 1 cup Brown Rice flour * 1/2 cup Tapioca Starch/Flour * 1/2 cup Potato Starch * 1/2 tsp Baking Soda * 1 tsp Baking Powder * 1 1/2 tsp Xanthan Gum * 1/2 tsp Salt * 3/4 cup Flaked Coconut, unsweetened * 2 - 4 Tbs Coarsely Chopped Candied Ginger (I used 4), plus extra * 1/2 cup Dried Cranberries Directions: Preheat oven to 325F degrees. Mix the flours, baking soda, baking powder, salt, and xanthan gum together with a whisk and set aside. Using an electric mixer beat the butter until soft, and add the sugars, blending well. Add the eggs, one at a time, incorporating each well. Add the vanilla and blend. Add the dry ingredients until just blended Add the coconut, ginger, and cranberries and mix until just blended, about 10 seconds. Spoon a full tablespoon of dough (or use scoop) and press into a 2" circle (about 1/4" thick). Sprinkle additional chopped ginger on top of each cookie, to taste. Bake approximately 17 minutes (top of cookies won't brown much) Let cookies cool on cookie sheet for about 5 minutes before moving to cooling rack. Makes 3 to 4 dozen cookies, depending on size.

Here are the recipes I made today. They come in Sampler Loaf, Regular Loaf and Large Loaf. I made large loaves. Country White Bread Large loaf 1 1/3c water 1 1/2t salt 1 1/2T sugar (I used 1 T of blackberry Raw honey) 1/2c barley or oat flour (I used oat this time.) 3 1/2 c bread flour 2t yeast To mix in mixer Heat the water until warm, between 105F-115F; pour into warmed bowl, and add the yeast. Let stand 5 minutes, until the yeast begins to bubble. Add the salt, sugar, barley flour, and half the bread flour. Beat with paddle until smooth. Cover, and let stand 15 minutes. Slowly add the remaining flour, and beat until soft dough forms. Knead the dough in the mixer with the hook, on medium to high speed, adding flour as necessary, until the dough pulls away from the sides of the bowl and is smooth and springy but still soft to the touch. Remove the dough hook, cover the bowl and let dough rise until doubled, about 1 hour. ~I then shaped into 9 large burger size rolls and let rise on cornmeal dusted baking sheets until the size I wanted. Baked at 350F until golden brown. However the instructions contiune: To Shape and bake in the oven Lightly grease a baking sheet, or cover with parchment paper. Turn the dough out onto a lightly floured board or lightly oiled surface. Punch the dough down and shape into a round loaf, dusting in on all sides with flour. Place the loaf, with the smooth side up, onto the baking sheet. Cover and let rise until doubled, 45 minutes or so. Preheat oven to 375F. Using a sharp knife or razon slash a 3" circle on the very top of the loaf. Bake 30-35 minutes, until the loaf is golden and a wooden skewer comes out clean and dry. Remove from the pan and cool on a wire rack. Light Wheat Brioche Large Loaf 4 large eggs plus water to equal 1 1/3c 2 t salt 2 T sugar 1 c whole wheat 3 c bread flour 3/4c butter, softened 1 1/2 t yeast To mix in mixer Warm the eggs under hot tap water, and crack into measuring cup. Heat the water to 105-115F, and add it to the eggs. Pour the mixture into the warmed mixing bowl, and add the yeast. Let stand 5 minutes, until yeast begins to bubble. Add the salt, sugar, whole wheat, and half the bread flour. Beat well. Cover, and let stand 15 minutes. Slowly add the remaining flour, and beat until soft dough forms.~change to dough hook~ Cut the butter into pieces and add it to the dough. Knead the dough in the mixer with the hook, on medium to high speed, adding flour as necessary, until the dough pulls away from the sides of the bowl and is smooth and springy but still soft to the touch. Remove the dough hook, cover the bowl and let dough rise until doubled, about 1 hour. To shape and bake in the oven: Lightly grease a fluted brioche pan, a 9" round cake pan or 9x5 loaf pan. Turn the dough out on a lightly floured or oiled surface. For traditional brioche shape, punch the dough down and pinch off one-quarter of the dough. Shape the remaining dough into a round loaf. Place the loaf, smooth side up, in the brioche or cake pan. Make an indentation in the center of the loaf. Form the pinched-off portion into a teardrop shape, and place, pointed side down, into the hole in the loaf. Or press the dough inot the loaf pan. Cover and let rise until doubled about 1- 1 1/2 hours. Preheat oven to 350F. Brush or spray loaf with water. Bake 45-50 minutes, until wooden skewer inserted through the loaf comes out clean. Remove from the pan and cool on wire rack.

Hey JoAnn! I've had this recipe for Jewish Rye for quite a while. Don't remember where I got it, nor have I ever tried it. If you do, please post the results. ABM JEWISH RYE BREAD 1-1/8 cup water 1-1/2 tsp. salt 1 Tblsp. sugar 2 cups white flour (for darker rye, substitute whole wheat flour for up to 3/4 cup) 1 cup rye flour (for lighter rye, substitute white flour for up to half the rye) 1 Tblsp. olive oil (optional -- it seems to make the bread stay fresh longer and some people prefer the texture) 1 Tblsp. caraway seeds 1/4 cup chopped onions (optional) 2 tsp. yeast Place all ingredients in bread machine in recommended order on the dough cycle. After first rise, remove dough, place on a bread board and punch down. If dough is too sticky, covering your hands or the bread board with corn meal or white flour usually is enough to bring it to the right consistency. If using a bread pan, shape loaf and place it in oiled bread pan. If you have a pizza stone, don't use a bread pan; shape the dough into a loaf or a ball or as you like and place it on a floured board (or the pizza peel). In either case, slash top with a sharp knife, cover the dough with a tea towel and leave it to rise for 1 hour. Preheat oven (preferably with pizza stone) to 450° F. The stone makes the bread crustier and gives a better contrast between the crust and the interior crumb. Spritz walls of oven with water twice before putting loaf in. (Omit for a less crusty bread). Bake thirty minutes at 450° F., spritzing the oven walls once more after five minutes, or, alternatively, bake fifteen minutes at 450° F., then reduce heat to 350° F. and bake thirty minutes more. Remove and allow to cool on rack.
