Brass mortise locks, knobs, and swinging escutcheon covers...help

I guess this is a tall order. I want my interior knobs to be unlacquered brass, use a mortise lock, have escutcheon covers that swing, and use a skeleton key. I found some on house of antique hardware, but am unaware of the quality and also do not like how their roses have visible screws, unlike the Baldwin roses I've seen. I've found perfect antique brass swinging escutcheon covers, but they don't come with the escutcheon for the other side of the door, and I don't know how/where to buy the actual mortise lock for the door. I need help in any form as I'm getting myself super confused with all the options for the antique look I've become obsessed with. thanks!
