Does anyone decorate wedding cakes?

I am doing a wedding cake next week and the bride has chosen a cake that has balls or beads all over it. I don't think I could ever get them anywhere near even in size. Wilton has pastel candies that would be perfect size but does not have them in white. I downloaded the directions from the wilton Web site on making beads and balls but would really like to buy candy balls. Anyone have any suggestions?

I used an actual string of pearls. Like you can buy by the yard in craft stores.

I draped them and put a rose where they attached to the cake.

The lady who cut the cake just pulled them off when she started to cut that layer. Worked great.

After re-reading , I see you say "all over"...does she mean like poka dots? If so the real pearl would not work at all for that...I used them for swags, draped around the top of each layer. Sounds like a lot of work to me.

I used this recipe for a 25th anniversary cake. It was nice....moist..sliced nice and not all crumbs. ______________________________________________ 1-2-3-4 Cake 1 cup butter, softened 2 cups sugar 3 cups Swans Down Cake Flour, sifted 3 teaspoons baking powder 1/2 teaspoon salt 4 eggs 1 cup milk 1 teaspoon vanilla extract 1/2 teaspoon almond extract Preheat oven to 350 degrees F. Butter and flour three 9 inch cake pans. Make cake: In a mixing bowl cream butter and gradually add sugar, creaming until light and fluffy. Add eggs one at a time, beating well after each addition. In another bowl sift flour with baking powder and salt. Add flour mixture alternately with milk and flavorings to creamed mixture, beating after each addition until smooth. Pour batter into cake pans. Bake for 25 to 30 minutes. Cool in pans 10 minutes. Remove from pans and finish cooling on racks.

This is one from Cakecentral.com and if you go to that site, there are endless variations. The *Original* WASC cake recipe Ingredients * The *original* WASC cake recipe by kakeladi 1 box cake mix (I prefer Betty Crocker) *see notes at end 1 cup flour* 1 cup granulated sugar generous dash of salt 1 cup sour cream* 1 cup water * 3 whole eggs 1 tablespoon flavoring* Instructions In bowl mix together dry ingredients. ItÂs helpful to use a wire whisk; important w/choco cake not so much for other flavors. In mixer bowl place next 4 ingredients. Add about 1/2 of the dry ingredients and blend together, then add the rest of the dry ingredients & blend. Mix for 2 minutes. Pour into prepared pans * and bake as usual. *NOTES: *ANY* cake flavor can be used. Some tell me they just dump all ingredients into the bowl together others say they sift all dry ingredients together. Match the flavoring to the cake flavor such use lemon/almond mix for lemon cake; strawberry for a strawberry cake etc, etc. For most flavors you can use a mixture of vanilla, butter, and almond which is what I do most of the time. You can use milk, juice, thawed fzn concentrates, soda pop (ie: Coke) cream or just about anything wet for the liquid. This recipe is based on mixing in a kitchenaid mixer. I use position #1 to stir it, then #4 to mix the batter. Most of the time I forget to add the salt:) On rare occasions I have used other brands of mix. This makes the amount of batter as if you used 1 1/2 mixes and is perfect for a 10â³ sq OR 9Ã13 OR one 8â³ & two 6â³ round;OR two 8â³rounds OR a 12â³ round; and other combinations of pans. I prefer to bake at 300 degrees for about 20-30 minutes (depending on size of cake) then turn oven up to 325 for about an equal time. If cake has pulled away from sides it is overbaked. After cooling, the top might be a bit sticky. Some people have told me they use plain or flavored yogurt instead of sour cream. IÂve always used all purpose flour. Some tell me they use cake flour but then the amount is less Â maybe 3/4 cup Â not sure. The flavoring I most often use is this mixture: 1 part vanilla extract 1/2 part butter flavoring 1/4 part almond flavoring A "Part" is any measure be it teaspoon; tablespoon; cup or quart Smile Since I made many wedding cakes I usually mixed it up by the cup:)

I always use the method from "The Cake Mix Doctor" (and use it for ANY flavor cake mix): BASIC YELLOW BUTTER CAKE 1 yellow cake mix (18-1/4 oz.) 1 stick butter (8 Tblsp.) butter, melted (do not use margarine) 1 cup milk (2% or whole Â not skim) 3 large eggs 2 tsp. Vanilla extract Preheat oven to 350Â° F. Grease and flour two 8-inch round cake pans. In large mixing bowl, combine ingredients listed above. Beat just until blended, and no lumps remain. Pour into pans and bake at 350Â° F. for 27-29 minutes or until cake tests done. If making cupcakes, bake for 20 minutes.

I have wedding cake-related follow-up. As I was finding the photos of my cake, I scrolled through the reception photos and was thinking about all the people in the photos. I was thinking especially about a grad school friend whose parents were able to attend and the photo of her and her mom and how wonderful that they could all be there. My friend's husband is an Episcopal priest and he performed our ceremony. My friend emailed this week to tell me that her mom lost her battle with breast cancer. It was so touching that I was just looking at that photo due to this thread. As I mentioned to my friend, it is bittersweet to see the photos of the people we've lost in the 10 years, but I am happy they were there with us that day.

Yes, they are all over the cake. The bottom layer which will be 16 inches has them in slanted rows about 1 inch apart with 6 to the row. It is certainly going to be a lot of work. She is a special young lady to our family and the cake is our wedding present to her.

Has anyone used fondant. I bought a box at Walmart and am going to tty to roll out small balls to put on the cake.

Couldn't you use royal icing and pipe them on to parchment, then peel them off and stick them on the cake? That way you could make a whole lot of them, and only use the ones that came closest to being equal in size.

They would be better off flat on the back than round balls anyway, to adhere propery to the cake and look like pearls, not warts! LOL

Wilton sells edible pearl dust, so that once you piped those on the parchment and they dry, you could dust them with the pearl dust for a wonderful soft, pearl glow.

I'm w/Les on this. Defiitel use Royal icing and a size 2 tip. It just takes practise to get your 'balls' uniform is size. Twist your pastry bag real tight-don't try to fill bag real full-better control. When making the pearl dot...Hold your bag straight up-don't slant the bag. With a firm squeeze, you just work faster-rather than slower. By doing that, you'll get the rhythm of the size thing. As you stop squeezing once the size is there..make a quick circle with the tip-like making a small zero, then release your tip. Let the dots set a minute or two, then dipping your finger in a little cornstarch-gently tap the top of the pearl to smooth it & remove any points you left when you released. Definitely use the pearl dust too.

This is a picture of the cake I am going to try to copy. I think I will definitely use the Royal Icing, make them and then put of the cake. How long do they need to dry and can they dry too much. I will decorate Friday - the wedding is Saturday.

I have made cakes in the past and I used white edible pearls. If you can't find them at the bakery, try the wholesale bakery company. Sometimes they can special order them for you - or at least for your favorite baker. I always liked putting this edible irridescent flakes on top of my cakes but no one carried it. So I called the wholesale bakery supply and they said they would order it for a baker but not an individual. You may have to ask someone you know with a bakery to order it for you. Good luck.

I don't know where you live, Thelma, or what the budget for the cake is, but I thought I'd pass this ebay page along as this gal seems to have quite a selection of edible pearls - you could email her and see if she could get them to you in a very quick fashion...

Why didn't I think of Ebay and Why 0 Why didn't I post two weeks ago. I went on line and did a search for edible pearls and found a shop within 100 miles of where I live. I have already ordered them. They will ship before 9:00 tomorrow morning, so I should have them by Wednesday, Thursday at the latest. I will decorate Friday so hopefully they will be here in time and be what I can use. They were pricier than I wanted but ordered them anyway.

Thanks to everyone who helped. I will post a picture next week. I am also doing the groom's cake with an Auburn University theme and also a railroad since the groom works for the rail road.

Hopefully they will arrive in time for you - and I'm sorry, I should have looked it up when I first read your post last week but didn't think of it either.
I'm sure the cake will be marvelous, lots of pictures for us to oggle I hope.
