Cooking shrimp and cheese grits...

I was just over in the Harvest forum and someone had asked a question on cooking grits, which brought me back to a question I've had...

This summer I had some of the best cheese grits with shrimp and a little halapeno at a hot food bar. They were very creamy and white for grits.

June Lynn mentioned that someone had told her to cook them with 1/2 water and 1/2 milk to get that creamy texture that lasted. (You know how grits usually set up.)

Do any of you have a suggestion or recipe that sounds like this?
