When I worked at the Hilton 25 years ago one of the cooks - Herbert - was from Nigeria. He made a blend of spices he called Berbere. He gave me a list of ingredients as my going away gift and I started making my own. About 4 years ago I contacted Penzeys and asked why this popular seasoning wasn't a part of their inventory. Apparently they've had many people asking for this seasoning blend. I was in Penzeys today and their newest seasoning is Peri Peri - a version of Berbere. Their blend contains: cayenne pepper, garlic, ginger, fenugreek, cardomom, cumin, black pepper, allspice, turmeric, cloves, cinnamon and coriander.

It smells divine! I've used my homemade Berbere on meats, poultry and potatoes. Although the very first time I had it Herbert had prepared a rice dish for the employee cafeteria at the Hilton. It was fantastic.

Interesting to note that Penzeys offers no suggestions for using the seasoning. I'm sure their customers will start using it and recipes will soon appear on their website and in their catalogs.

I've got chicken breasts in a yogurt marinade with the Peri Peri seasoning. I will bake them tomorrow and let you know how they turn out.
