Can you overcook a braise? In a crockpot?

I have a 6 lb roast in the crockpot to make Italian Beef.

The recipe calls for cooking on high "all day"

DS started it around 6 pm and I don't want to have to set my alarm to deal with it at 4 am - what was I thinking? Well obviously I wasn't :) although ds might still be up

So, do you think I'll kill it if I cook it for 13 hours and get to it at 7 am?

Disclaimer. I don't eat meat at all, only cook it on the rare occasion for dh but this one was to show ds how easy it is to cook with his crockpot. I don't want to dissapoint him and I certainly don't want to waste the meat.

And on high, liquid in my crockpot simmers, don't know the exact temp. Should I turn it to low if I'm cooking for longer?

And for the record:

ITALIAN BEEF

Mix in crock pot:

1 (1.25 oz) envelope dry onion soup mix

1 t. oregano

1 t. red pepper flakes

1 t. basil

1 t. dried parsley

1 large clove garlic, smashed

3/4 cup water

Place on mixture:

3 lbs. Roast (I usually use a rolled beef roast or a chuck roast, whatever is on sale!)

Cook on high all day, or until meat is tender. Turn it over every now and then if you can. If not, that's okay too! Shred the meat, let it simmer in its own juice for a while, and serve on buns or hard Italian rolls.

And yes, I doubled all the ingredients
