Ok first of all you need to understand you can not get rid of Internet explorer it is a part of Windows and you must have it because some of the things you will need from Microsoft must be done using IE, like windows updates for example, many programs will only allow you to use them with IE, some ISP's will only allow IE for their install other browsers are not supported.

You can get rid of IE7 and it will revert back to IE6 but if you do not use IE why bother just don't use it. IE7 has more updated security features.

It is perfectly fine to have both firefox and IE on the pc in fact they can both be used at the same time with out problems.

To revert back to IE6 if you go to add remove programs you can remove IE7 but understand you will still have IE. I would definitely not remove any of your updates in add remove.
