Non stick frypan- lots its 'stick'

Hello

I have been battling away with my good quality, non-stick frypan, for quite a while. It seems to have a coating on it, which stops it from being non-stick. I think it could be a build up of olive oil, that I occasionally use in the pan.

Despite that fact that I wash it, the coating doesnt come off.

Any ideas on how I can restore this pan to its former non-sticky self?

Is this a well-known manufacturer that you can look up their toll-free customer hotline online and then call and ask them? What dish soap do you clean it with, I like Dawn because it cuts through grease just like they advertise. Do you soak the pan in hot water and detergent? I wonder if a cut lemon would help remove the residue.

Now I'm curious, what brand is this pan, how old is it and what non-stick material does it have?

Do you use a spray like Pam? If so, that's what this is.

I would use flyingflower's advice and call the manufacturer. Non-stick coatings are not really that tough so I would want to check before trying anything harsh on them.

Most people use the enamel-coated Graniteware and are quite happy with it. With a little care they last for many years, and are relatively inexpensive to start with. The enamel coating can chip and craze, however, it you mistreat it. When that happens the underlying metal rusts. You can "repair" it by using those high-heat paints such as stove black and engine paints. It will be unsightly, but perfectly safe. Most people just ignore the damaged spots until, at long last, the pot rusts through. Then they replace it. But we're not talking about a fast process. It takes years. There are alternatives. Stainless steel is non-reactive, and you can find it relatively inexpensively if you don't get the clad stuff. I like using smaller SS pots when I only have a couple of jars to do. Beats the heck out of heating up a full canner load. Heavy-duty aluminum stockpots can work for canning. I wouldn't cook anything in them, myself. Right now my main bwb kettle is a recylced pressure canner. It's my old Miro, which never worked right as a pressure canner. So I replaced it with a Presto. I wouldn't buy a pressure canner just to use as a bwb, you understand. But they can serve both purposes if you only want one kettle. BTW, I think you really mean "non-reactive" when talking about vinegar. Conductive refers to the transfer of heat or electricity. The Graniteware is non-reactive so long as the integrity of the enamel coating is maintained. After that they aren't.

My Analon Nonstick Pro pieces have been in use since I bought them at a department store back in '99. They look like the day I bought them. Most amazing nonstick I've ever owned. A little dot of dishsoap on a wet paper towel and I don't have to waste space in the dishwasher after cooking eggs and sausage. I also have both cast-iron pots made by AGA-Rayburn and cookware by Faulk Cuilinaire made of stainless-lined copper with cast-iron handles. Choosing the right pan for the job is understanding how they perform. The AGA cast iron casserole pans have a machined-flat bottom that brings things to a boil very quickly. The flat surface contact overcomes the slow thermal properties of cast iron in comparison to the Faulk copper cookware that isn't machined flat. Faulk's copper speed is best attained on an open-flame cooktop as their bottoms are not machined flat. So, if I bring a syrup to the hard-crack stage, it will take off faster with cast iron. But, it will also get burned/ruined faster because of thermal overshoot inherant to cast iron. While it takes longer to boil in the Faulk copper pan, it cools down or transitions much quicker because of the copper construction. Important when keeping something on the edge of scorching to get carmelization. Just not good when you are serving food banquet style as it cools down equally fast. Something that scorches easily, i.e. custards, sauces, might not burn as quickly with a slow heat-transfer of a cast iron pan. For eggs or cheese, I don't think you can beat Analon pro non-stick.

I have 4...yes 4!! Le Cruset enamel cast iron dutch ovens and 2 sauce pans a small oval baker and 5 fry pans...but all of the fry pans aren't Le Cruset. I like to flour my meat before browning....that's what makes a crust on the meat.... I flour a pot roast, stew meat or chicken tenders, fish etc. Flour browns and gives it's own flavor....remember how good Etouffe isw ith a good brown roux? well browned flour adds that taste to the pan drippings. enameled cast iron is not non stick...but I guess the stuck stuff doesnt burn black and releases and adds to the gravy. However I used an aluminum frypan and a dutch oven for years before I got the le C stuff....and my guess is your pan was way too hot before you added the meat. Browning means cooking until browned, not cooking over a blazing fire until the outside is brown and the inside still raw. Turn down the heat! And...every wok cook knows "hot wok, cold oil, food won't stick" The le Cruset ware is wonderful because it's so heavy and cooks evenly and holds the heat sow ell....it's possible to cook on just the barest simmer. Oh, for frittatas! That's different! I've never had a non-stick pan that I liked, so was just reading along for information. I've been on an omelette kick recently. It started as experiments with my DeBuyer carbon steel crepe pans. I didn't think I'd like them for eggs because I have a tendency to wiggle them around in the pan and have the best luck with enamel for that (i.e., there's residue, but the eggs still come out, by and large). People were talking in Appliances about using them for breakfasts, and I didn't think they'd be good for eggs in a fry-up. Sure enough, I tried it, and it could have been worse, but the Le Creuset is a lot better. On the other hand, in doing an experiment regarding my induction, when I was feeling horrid and was looking for a soothing greaseball to eat, I made a grilled egg sandwich using a crepe pan for grilling the sandwich and my blini pan for the egg. That is the best sunnyside up egg I've ever made! It was done in butter, but was totally slidy. Into the sandwich without utensil intervention just like the non-sticks do on TV, same for the sandwich itself, even with the contents running all over the pan. So for grins I tried the crepe pans for omelettes and they're great! Best omelettes I've ever made too. The folding has always been my downfall. The low sides and really really smooth surface make it really easy to get the spatula underneath and flip it over. Also, the sharp angle makes for perfectly round eggs, which looks really cool. :) The only downside is that they don't have lids, and the ones I've been using are only a so-so fit. Getting it done just right on the top is a challenge. Really beautiful omelettes, however. I haven't done it yet, but it occurred to me that it would be really easy to make a frittata by starting it in the one pan and heating the next size up one to flip it into. They make double sided frittata pans to do just that. I wouldn't put these in the dishwasher, but cleaning is just so easy! Right after plating, I run the pan under hot water with a drop of dish liquid, give it a swish with a plant fiber scrubbie if necessary, rinse, pat with towel and put back on the warm element to thoroughly dry. Sounds like a lot, but takes less than 15 seconds. If it looks like it needs it, I'll give it a quick spray of oil for the seasoning too. If it hadn't been for that discussion in Appliances, I'd still be using these mostly for socca, blintz pancakes and other crepeish things. Because they're so smooth--smoother even than enamel--I think they're great for anything one might do on a flattop, as long is it doesn't get scrambled or slosh out of the pan.

I had a 12" Calphalon Non-stick fry pan that had also lost it's non-stick property.

The actual coating on the pan had not flaked or scratched, it just had built up a layer of "something" that would make everything stick to it.

I tried all sorts of things to get the surface restored to it's former glory... no luck.

The only thing I could figure out, is that I had been using PAM for many years before I learned that it was NO GOOD for Non-stick pans. It builds up a layer on the surface and you can't get it off.

This was before Calphalon started adding warnings about using Pam. If anything, I now use a little Olive oil, veg.oil or butter. No more problems.

Stay away from Pam !

I sent my fry pan back to Calphalon, and they sent me a brand new one... no questions and no hassles.

Well whadayaknow. You learn something new every day. I had no idea Pam was bad for non-stick. Is this due to the pan being placed over a flame? I never use Pam when I'm frying but I do use it every time I bake in my non-stick bakeware pans. Will oven baking cause the same problem?

I can't say for sure about using Pam for "baking", but I will say that the reglar baking tins I use have a sticky coating on them that is impossible to get off. YUP! I had used Pam on them. I don't anymore, I use Crisco shortening or butter.

Chekc out the Calphalon web site and see for yourself, they recommend that you do NOT use Pam ( cooking sprays).

It is not that Pam is bad for non-stick, it just leaves a residue and over time, makes the pan "yucky" (that's a technical term). It will do the same for stainless steel. In general, you should avoid it but I still use it for some applications.

I am trying a new spray that says it does not contain "silicon." I am not sure if that is what causes the residue from Pam but so far, so good. I have not used it much though.

What is this non-silicon product that you bought and where did you buy it? Otherwise it's back to the drudgery of greasing a pan by hand again. How spiled have I become where I can't take a few extra seconds to butter a pan the old fashioned way?!

Thanks for all the replies.

Dont think we have Pam in Australia, so I havent been using that, just olive oil on my pan. I really think the "gunk" is a build up of olive oil.

Flyingflower - great idea to phone manufacturer, I am going to have a look at my pan, after I have finished this, and do some investigating.

I just wash the pan with hot water, and normal old dishwashing liquid. I will give a cut lemon a try.

I will report back if I come up with anything interesting.

I might ask a lady here, who knows how to remove every stain on anything in a house. She has written a book about it. In fact I have seen her book in the bookshop, I might go and just look it up in the shop !

Thanks for all the suggestions, nice to hear other people have such a problem with their frypan.

I saw the silicon-free oil spray at Safeway (but not Albertsons). I've forgotten the name of it but you can't miss it because the packaging is very different than the other sprays (it's sold along side of them). I didn't buy it because I was shell-shocked by the price (almost $5) but now that I've had time to think about it I think it's worth it. I will keep my eye on it a little bit longer hoping it goes on sale.

Doesn't Mazolla (sp?) make a new spray that is suppose to be better than Pam? Non aresol I believe.
