High end kitchen appliance justifications?

We're moving soon and looking at redoing the kitchen in our new place. We went through a remodel of our current kitchen and did a nice low to mid-range job appropriate for the neighborhood with KA and GE appliances.

This next house can hold whatever we'd like, however, and we really do use the kitchen all the time: we cook from scratch, make cheese, bread, preserves, etc. - it gets a workout. I'm trying to figure out where to splurge here: what is the advantage of a Wolf or Viking range over another brand (BTU's?). DW's I can understand (quiet, energy efficient) but refrigerators I don't (quiet, energy efficient, size, but do I need a SubZero?).
