I purchased a GE Profile all (nat) gas #PBG910SE1SS a couple of months ago. This model is not the "Cafe" version but has a simular if not identical cooktop and burners. Also it has full SS top and backsplash/contol unit -- heavy cast full width grates --- rather attractive and "pro" looking. Cleans up easily. Have only used the center griddle once and its a nice feature. I bought the GE in in place of a Bluestar that I had been lusting after for some time, but reconsidered as my condo rules prohibited an outside vent. No sense buying 22,000 Btus when it would only be practical to operate it @ half flame! Anyway -- the GE has been terrific in very way. (it does have a 17,500 BTU power burner too and brings a large pasta pot to a boil in less than half the time my old Whirlpoop did -actually the WP could barely boil it at all). I still have to do my wok cooking (and crab steaming) outdoors on my "cajun" LP gas burner (34,000 BTU) because of the smoke issue. The GE oven holds 500F easily for my pizzas and according to my My Infrared thermo-gun indicates oven stays within 20degrees at all settings--- very stable. Also the simmer burner is awesome w/nice stable flame you barely can see so be careful that it gets turned off! Large burners also simmer well too. It may not be a BS but I sure am happy with the GE. It has been flawless and performance beyond my expectations --- I thought I was making a big compromise. Price was not hard to take either, bought a new Profile DW along with the range for a lot less than the BS alone.

If we are talking about the same Profile you are talking about, the difference for me was the placement of the back control panel in the profile and the lack of it in the Cafe. This panel, especialy with the additional metal lip they put on, intrudes too far to the cooking space that made it very difficult to put 4 different pots on there comfortably, or at all. Pans are ok, I think they fit under the lip, but nothing tall. I actually took my pots and pans to the store and experimented with the cooking space of the different ovens. Even though it is kind of funny, I recommend doing it. Hope this helps. Oh, also, we got a huge discount on the Cafe, over the MSRP, so if you price compare, you may get a better deal also. We checked recommendations for our local appliance stores and went into the highly recommended ones and compared prices. Most do price matching and there is a fair amount of bargaining that happens that we didn't know about. Same goes for fixtures and faucets. We bought all of these below internet prices locally. Neither of those are slide-in. Both are freestanding. The rare feature both have is self-cleaning gas ovens in this price range. All burners can simmer.It depends on the size of the pot and the contents that determines how much power and how wide a distribution of heat you need to simmer properly. The dedicated simmer burners on both these ranges are for 1 quart or smaller pots. The GE bigger oven is bigger than the Viking. Then GE has a second oven. It has a more powerful power burner and a smaller simmer burner. On paper GE Cafe wins in a rout. It all depends if you value the prestige of the Viking brand and the benefits of "Made in the USA" or Mississippi. Last time I read about GE Cafe range production it was done in Mexico. Although GE is moving production of a lot of appliances to Kentucky I think the Cafe ranges are still made in Mexico.
