granite seam and upmounted sink

In our new construction kitchen we have a granite countertop being installed and a shaw farm house sink. The first granite slab they had put in went from one wall to the edge of the farm house sink. then they asked how we wanted the sink mounted since it was setup to be upmounted. We told them how we wanted it upmounted and the front proud of the cabinet.

They removed the first slab and installed a three piece granite slab. They had two seams now. One in the middle of where the cooktop will be. The other at the back side middle of the farmhouse sink.

Is the seam in the middle of the cooktop a bad idea? How about the one on the backside of the sink? The builder said the granite was too long not to have the two seams.

Another issue is that the cutout they did for the farmhouse, as well as the seam at the cooktop area is very ugly. The cut edge of the grainite has chipping both at the seams and the sink cutout. I already told the builder that I was not pleased with the work and he said he would look at it on monday.

What can you all tell ma about an install such as this?
