Why don't charts copy correctly?

Whenever I'm using MS Word and want to copy a chart, it doesn't come out like the original. I have MS XP. Sometimes I can use a wonderful tool called Stripmail, but it doesn't always work like today. Here's what I "pasted" - not very useable to say the least!! I'll give you the link to Stripmail. It has been invaluable for me more than once when I wanted to copy something that didn't want to be copied!

In the example below, the headings didn't come out nor the correct spacing. This is a list of carbohydrate counts of foods with fiber and serving size being two columns. Any ideas?
