Vanities or Pedestals-Help Me Decide

We are getting ready to remodel two bathrooms. Two SMALL bathrooms in a small home with lots of custom woodwork all through the house. (When I say small, I mean small-I think I need about 75 feet of floor tile for both of them.) The pedestal sink in each bathroom sits in an alcove-33 inches wide in one, 36 inches wide in the other. It is perfect design for a built-in cabinet and countertop.

Almost everywhere I've lived, I've had pedestal sinks. The few times I have had a countertop and storage underneath, to the best of my recollection it did not make a huge difference. Actually, I remember a sort of "junk drawer" feel about the top drawers, LOL.

So, here are my questions...

What do you all store in those drawers and cabinets?

Do they collect junk or was that just me?

Do you keep a lot of stuff on the countertop?

For those of you that went from a pedestal to a vanity, or the reverse-did it change how big the room felt? I can't decide if a vanity will make the room feel smaller or not.
