I am a longtime lurker and (finally) remodeling my kitchen. I have pretty much decided on getting a gas range AND single wall oven. I am intrigued by the capital maestro wall oven with the moisture feature. How does this work exactly? What does moisture control mean?

I originally was sold on the gaggenau steam oven, but saw it in the showroom and felt it was too tiny for me. I bake large amounts of bread weekly, and cannot justify the price for such a tiny oven.

Sidenote: for the range, I am deciding between a bluestar & capital culinarian... still undecided, but have been reading all threads here on them.
