How durable are the Capital Culinarian oven racks?

I bought the Chef King 13 x 24" griddle to use on my new 30" Capital Culinarian Self-Clean. The griddle is still, in the pic below, in the process of seasoning.

It fits, snugly but cleanly with no rubbing, into the oven where I would like to store it.

BUT it is very heavy--nearly 20 pounds. Can I store it there, removing it when I use the oven or the griddle? That means in and out pretty often.

Just how durable are those roller racks?

Cool stove! Sorry that I have no answer for you. I would ask Trevor at Eurostoves about storing a heavy griddle on that rack.

The racks should be fine with a 20lbs Chef King griddle.

Went to the showroom in Newport Beach - thanks for the tips on the phone numbers! Well worth the trip, totally made my decision easy. The Capital looks so much more refined than the Blue Star. The Blue Star was top of my list but it looks so industrial that I just couldn't put it in my kitchen. I thought I wanted a self-clean but after looking at both, I liked the manual much better. The shelves in the manual slide in and out much better than the shelves on rollers in the self-clean version. The rollers seemed to stick on the self-clean displays and the rotisserie is a beast! I'm sure if I was really into rotisserie cooking, it would be great but it looks like you could spear an entire turkey on that thing! Sam was super accomodating and made everything super easy - I ordered my 36 Culinarian the next morning and cannot wait for it to arrive . . .

They were very difficult to move and adjust, I didn't like the weird way the edges flipped down to come out. Even the sales rep had a hard time adjusting the racks. It looked like an overly complex approach. I also didn't like the screw top on the water well, also seemed like a pain to deal with.

I have not lurked or posted in many many months. Slow day at work so I thought I would take a peek. Same lively conversations taking place I see! I was suprised to see this thread still alive although it appears to have gone completel OT. So I don't mind going in a different direction. My extremely brief 1 year report: I have owned a 30" CC for one year now. I can say I am as happy with it now as I was on day one, and that is to say I am very happy. Wok cooking is a blast, and the CC with wok grate kicks butt. In general, stove top cooking is fantastic. Only one complaint - low level simmer is higher than I'd like. I agree with Diego, the 30" center grate is not great looking (but no big deal, and the 30" was definitely the better choice for me). I have underutilized the rotiserrie - works well but with a chicken I find the skin starts getting too crisp before the insides are done - I have finished with the rotiserrie off and the oven on. Back on topic the rolling racks are OK. I have rolled them with a 20# bird without issue. They could roll better though. I do not bake much, but the oven has served me very well. The range looks great and cleans up relatively easy. I would buy another CC in a heartbeat, but I shouldn't need to make that decision for many years. I would also have no hesitation buying a product from Trevor again - he provided better post-purchase support to me than anyone else for anything I have ever bought. And although I'm sure I made the right choice for me, I'm also sure I would have been tickled with a BS had I gone that direction. Happy holidays everyone. Jon

Like many happy appliance owners I don't often write rants or praises about them. Three years in I'm getting along great with my 36" CC. I bought it through Trevor both because he is local and his reputation for service. Fortunately I've never needed to test the factory response or service. I installed the range myself. When it was new they came out with the "small pot burner". I wrote to the company and asked for one, and they sent it, no fuss, no muss, no bother (and almost no contact-- perfect!). I put it in and since then everything about the range has worked perfectly-- no more burned oatmeal. If I had it to do over I'd get the griddle rather than the grill, but I have no one other than myself to blame for that choice.

Thank you for the suggestion.

I thought of calling Eurostoves. I spoke to Trevor and another person there as I was deciding on Capital. But since I found I could get such a great deal locally (delivery, hookup, and haul away of the old range --and the two experienced (several previous Capital installs) technicians actually took it 1/2 mile down the road and put it in a neighbor's garage!!-- for only $200), I decided not to buy from Eurostove. Capital controls prices which are the same everywhere as far as I can tell. So the delivery, install, and takeaway was the decider.

Consequently, I hate to impose on Eurostove's generous sharing of their time. Trevor has been such a great source of information here on GW.

I hope someone here will know. I think it will be fine. The oven can certainly handle a 20 pound turkey. I am just not certain a given rack can handle a 20 pound turkey 3 or 4 days a week for 52 weeks a year!

I have gained immeasurable knowledge from your videos on the Eurostoves site and your comments here.

Capital owes you big time, as do I.

And I will leave the griddle in the oven unless one or the other is in use.

Have you considered these Chef King griddles as a useful addition to your cookware grill and griddle offerings on the Eurostove website? They seem ideal for the CC range.
