Ratings please for BS and/or AR gas wall ovens

My ideal set up would be a gas 36" freestanding range and a gas wall oven with microwave or speed oven on top. However, I cannot get enough feedback from users of Blue Star or American Range wall ovens.

I have read the feedback on their freestanding ranges which have not been all that great. These range issues have made me very hesitant about buying a wall oven from either of these manufacturers.

I am also looking at NXR 36" range. I have seen good performance ratings but not always favorable reviews on it's appearance. Can anyone tell me if the door gets hot or the knobs?

I did not want to spend the money on a 60" Wolf but, at this point Wolf looks like the only manufacturer who can offer me the closest to what I am looking for.

I want (2) gas ovens. I just don't want to buy ones that are going to be problematic.

Why not the BlueStar range i.e. 60". They give the most power, configurations of burners, griddle, & charbroiler. The ovens are ALL GAS w/30,000 BTU's. The design of the oven bottom with channels along side, give a very consistent, even heat distribution. The broiler is 1850 degrees and will do a steak better than the outside grill (Just ask Ruth Chris). They are also available in 190 colors (and the knobs too). The wall ovens add an electric element around the convection fan for even better performance. The french doors are awesome (BlueStar has two handles to balance the symmetry).
FYI....BlueStar uses brass valves, metal knobs, more cast iron and porcelain than the competition. It is a TRUE commercial range. By the way, the 60" ovens accept a commercial baking sheet (26"x18"). Wolf as well as alomost everyone else will not. Good luck!!!
By the way, I own a BlueStar 36" range and have so for 4 1/2 years. The ONLY thing that has been replaced is one igniter that I broke when cleaning. It took me about 3 minutes to replace and is a VERY inexpensive part.

I originally looked at all Blue Star appliances. Then looking at the feedback from owners I saw consistent issues with the door hinges and ceramic igniters breaking from spillage. I would want sealed burners and don't know if that would make any difference.

Do you have any problems with your range door? Does the door or knobs get really hot to the touch while in use? I heard one complaint was that the panels above and below the WALL OVEN gets really hot. What part of the range gets hot while baking?

I love the french door wall oven and would have opted for BS 36" range and (1) wall oven.

Please respond to my questions about your range if you can. I would appreciate it very much.

This is something many folks face during a kitchen remodel. What is the most important thing, budget, appliances, recoup $ w/resale? You mentioned, small home that was not expensive. Is your fear of not recouping the $ if you put in high end appliances? If you expressed that your ready for the next level, plus you would want a wok, high btu and charbroil...(you didn't mention rotisserie or self clean). That comes with a price tag. You stated thoughts of rangetop w/ cheaper wall oven. If you have or foresee any bending/back problems, go for rangetop/wall oven. Just remember that the rangetop and cheaper wall oven will require gas and/or electrical upgrade, wall oven cabinet, rangetop cabinet and additional installation fees. On top of the price of the rangetop and wall oven, could cost as much as a range alone. If you really want the high end cooking appliances, be very cost conscious about the other elements in the kitchen. Frig, d/w, micro, sink, counters, flooring, lighting, faucets and cabinets. You don't have to break the bank. For all the money your spending, you should be pleased when you enter the kitchen. I would recommend you stick with gas. I own a 48in CC range, single Capital wall oven, Samsung CD frig and KA d/w. Good Luck

response to pacwest cook's American vs BlueStar wall oven post and an earlier post about American Range vs BlueStar ranges It is obvious that pacwest cook's comments in both instances are simply attempts to boost American Range sales; probably by an employee in American's distribution chain. I seriously doubt that BlueStar copied the wall oven design of a much lesser player in the pro-style cooking arena. The comment about BlueStar's burners being all the same size (range comparison post) missed the point that the number and location of burner ports vary according to the BTU output of the burner, so smaller pots can be placed on lower BTU burners without the flame creeping over the sides. I'm guessing that pacwest cook will also favor us with the results of his or her "research" on various other kitchen equipment, including dishwashers, refrigeration, coffee makers, etc whenever someone inquires about any brand against which he or she competes.

You can fry chicken on a 8K burner. My grandmother made the best fried chicken on a smaller gas burner. I have posted this link before about cooking myths but #2 relates to fat absorption. The Food Lab's Top 6 Food Myths It is based on this article. The best way you can compare simmers is the same way you compare maximum heat. It is by knowing the BTU rating on the low end. Any other way incorporates additional variables that muddy the water. deeageaux makes the point very well comparing a large chile vat to a 2 qt sauce pan. Temperature ratings are irrelevant. It is the power(BTUs). There are some simmer burners that will not require a double boiler for delicate sauces. There are many different amounts of heat that manufacturers call "simmer". Know the number so you can make a meaningful comparison. I used to work in a food lab and have cooked for many years on all kinds of ranges, gas and electric and there are work arounds for every situation. I would choose based on what you use the most. In my case I use the low end of burners all the time and when I need heat, I pull out the cast iron and my 15K BTU burners will produce a 500 degree surface with a little preheating. If you do a lot of large stir fries requiring high BTUs, and need simmer you can pull out a simmer mat or copper simmer plate. One consideration with a gas oven is that in general they will put more heat into your kitchen due to the ventilation required for combustion of the gas. This is compounded if the oven is poorly insulated. I would definitely look at how manufacturers treat their customers. Any appliance can have problems, but it is how you and your concerns are treated that make the difference.

Actually MUA is not required by Code everywhere, only some areas. Regardless of Code requirements, the OP needs to do MUA with 1200 cfms because that much suckage carries with it the risk of sucking back CO into the house, i.e. backdraft. It's a serious risk because with that much cfms pulling air out of the house, other exhausts will be pulled in, like from the water-heater, furnace, chimney and dryer vent. That backdraft is bringing poisonous carbon monoxide into the home. You can get away with no MUA with an exhaust that is 400-600 cfms and if your house is drafty and not a newer super-insulated house. But not at 1200 cfms. At 1200 cfms, cracking a window will not be enough. You will need to install an MUA system. Either add that to the expense of your renovation, or choose a different cooking setup. People not willing to install MUA is a main reason why people forego the 60" ranges and their exhaust requirements, and opt instead for a 36" rangetop and separate ovens.

I have never had a problem with the hinges. I also throw a little "Pam" on them every 3-4 months as maintenence. The knobs get warm ,but not hot or anything close to unbearable. Remember.....my range is 4+ years old. BlueStar has made a ton of improvements over the years to make "issues" go away. The kick panel used to get a little hot, they have fixed this today. All of the temperature issues have passed agency approvals and all High-end manufacturers have heat based on the increased BTU's. If you go see a BlueStar, make sure it is a V1 product (upgraded product). There are not many at all out there in that they just started shipping them. Dealers are being told to sell their older displays, but this takes a LONG time especially in these times.
