Baking Bread in Wolf Convection Steam Oven
Comments (8)Hi, I am also experimenting with my steam oven. I have made bread several times with auto steam bake. While the bread came out good, I agree, not fabulous. Last time I tried using the Wolf Gourmet "Bread" feature. I thought the bread turned out better and will use this feature again. One caution, once you selet "bread" you then select level of doneness (I think it was light, medium, dark). I selected medium and checked the bread once the aroma of freshly baked bread filled the kitchen. Happy I did as the bread was definately done! Best of luck. Comments (92)Have a look at Miele's recipe here from DGC 6800 cook book. On page 442, translating into Wolf's term, for baguette, it would be starting from cold oven: 1. 40˚C/104˚F convection steam 8 minutes 2. 50˚C/122˚F convection steam 4 minutes 3. 210˚C/410˚F convection steam 6 minutes 4. 210˚C convection 30 minutes The first 2 steps, would help proofing the dough further. Step 3 is for initial full rise with heat and humidity. Wolf does not have humidity adjustment where in Miele it can be set to 50% per recipe, so you can play around with timing, but 6 minutes after initial proofing sounds about right. Then finish off with dry heat, 30 minutes may be too long for a smaller loaf, but Miele program is written for the recipe in the book on page 110 for ~ 500g loaf. Comments (22)We're building a new house and the placement of the appliances is pretty much fixed at this point. We didn't have any idea of how tricky this would be. Speed oven, Steam oven plus 30" convection oven and induction cooktop. Where to put them all? And how to decide which manufacturer so that they all match, without breaking the bank? We're thinking that the 30" Convection oven will be the one we use least. The Miele Steam seems better than the Bosch, but that means we have to make everything Miele to match. Miele 30 " convection is a lot more expensive than the Bosch. And how many of you have a Speed oven and what do you use it for? Currently, we use a Microwave to heat a bowl of soup, or warm up coffee, or reheat leftovers. We roast a lot of chicken and use a Convection oven..same with fish. We're a retired couple so it's mostly the 2 of us, and wonder how often we'll have a crowd and use everything at once. Plus, we're moving to FL and will have a good grill with a rotisserie, so will have that option too. Also wondering about a plain Microwave +Combi Steam+ Convection set up. But we're thinking that for resale value, we should have a Speed Oven. Can any of you tell me which appliances you use the most and do you have any experience with Bosch cooking appliances? Comments (0)I was set on all Wolf cooking for our kitchen renovation--a 48" range top with grill and griddle and the Wolf single convection oven (M Series), and the Wolf convection steam oven. I'm considering Miele instead for a couple of reasons--the oven has a rotisserie and the steam oven is both plumbed and has a broiler. Thermador will be coming out with a 48" range top with grill and griddle option later this fall, and their oven also has a rotisserie. If I don't go with Wolf, I won't be able to take advantage of any of their promotions. I'm not sure how I'll like the look of the Miele and Thermador ovens to the right of the Subzero 36" separate freezer and fridge fridges (stainless with transitional handle). I'm out of space to panel the refrigerators--I don't have an inch to spare for the overlay. I could step down to 24" convection oven with Miele, but I'd prefer not to.
