Miele Chef Speed Oven Functionality?

We're planning on getting this to use as both a microwave and a second oven. The first oven would the 30 inch gas range. We currently use the range oven we have now very rarely, may-be once a month. Our oven cooking is done either in the countertop Breville or the outdoor cooker (Green Egg).

I'm wondering if there is anything that the Miele speed oven cannot do well. (Recognize of course that it is small -- but should meet our needs more than 90% of the time).

I'm hoping to use the Miele for all the daily baking and heating, virtually everything but the annual Beef Wellington (much smaller than turkey) which might even fit.

Would appreciate hearing what works well in the Miele, but especially if there is anything that doesn't.

I don't have the "Chef" model, but it is the same size as my Masterchef, and since I have the older version, it also does not have the lower heating element below the oven floor of the 4082 Masterchef.

The Masterchef aspect is pretty much that it has a mode where you dial in the type of food you are cooking and the oven selects how best to cook it. I do not use that, preferring to make my own mistakes and then just blame it all on the oven if things go south.

Seriously, I never really use the Masterchef "dial-a-meal" function. I just tell the oven how I want it to operate and for how long. It's guesswork, but it's fun.

The Masterchef model also has a thermometer probe that works in conjuction with the oven to cook meat to a given temp. I really haven't used that, either. But if I were doing a bird in there I probably would. The chef model literature doesn't mention that the 4042 has that or not. So probably not.

Other than that, the Chef model has knobs instead of a clean glass panel, that is something that I do not like. I like the easy-to-clean flat control panel myself.

I do not know if my list is exhaustive but it will be at least a start. I do recommend that you schedule a time to go look at the items you are thinking about. Seeing all the options is a great idea when you are talking about expensive appliances

Thanks Mojavean. You're correct -- the Chef Speed Oven does not have the bottom element or the probe.

I'm just wondering if the Chef Speed Oven is a "complete" oven (though small) that you can bake/broil/roast in, as well as you could do in a regular electric oven. Can you do all these things with the top element combined with the MW, even though there is no bottom element?

Kind of puts the parts-and-service issue in perspective.... Smeg obviously trying to crack the US market now; whether they'll succeed we don't know. As for the aforementioned Smeg dishwashers rebranded as GE (and later DCS), that's how Bosch and LG got started in the US too. Bosch entered the US market in the '90s with only three products (all high-end dishwashers) and we all know what happened since. LG used to just rebrand their microwave ovens for others (and sell a few themselves under the Goldstar brand); it took less than a decade for them to become a major contender in all appliance product categories. Samsung didn't sell any major appliances here until about a decade ago under their own name. Meanwhile, several once-big US manufacturers have disappeared or been swallowed by bigger fish.

Responding to my own post -- the Miele is 240V and 24 inches wide, and the Advantium is 120V and 27 inches wide. The Advantium is 950 W atts MW and the Miele is 1000. But what I'm really interested in is how they cook the food! Please share experience!

antss, I have reflected how I use the oven. In my experience, broiling is not to my satisfaction. If I put two things in the oven at the exactly the same time and exactly the same distance from the broiler and one cooks much slower than the other, than it is less of a broiler than the other, IMHO. Whether it was designed for it or not, they give directions for broiling meats in their instruction booklet. Basically, broiling meat in the speed oven will turn that into inedible grey goo, IMHO. sayede, If I am browning on the cooktop and finishing in the oven, ie fish or meat, I will use whichever seems easier or is not used at the time. They seem about the same. If the amount I am cooking is large, I will use the Viking. If I have to move quickly, I will use Viking since the oven is under the cooktop. Otherwise, I will use the Miele. It's a toss up to me. Roasting vegies and sliced potatoes, I tend to use the Miele. Sometimes, I cook it in the speed mode but often the time is not of essence since I am making 2 or 3 dishes at the same time to get the dinner together and I will just use the regular conv bake because I am more familiar with the way the food is cooking and there are many things that needs to happen at once and I feel that I do not have the brain power to deal with combi mode while dealing with the sauteeing meat or boiling pasta. If am baking potatoes or roasting beets to get ready for other things to follow, I will use the speed/combi mode because time is of essence. If I am cooking frozen meals (which i do not do often), I will use the combi mode. I don't make casseroles often, but I have used it and have found that it reduces the time by about 1/3 to 1/2 less. For example, 1 hour food is done in about 1/2 hour to 2/3 hour. I do find that the texture of the food does change with the combi mode and I am not particularly fond of it. I will not cook meat with it. This is probably where people will find the greatest amount of time savings, I guess, ie roasting a chicken. I have a BBQ with infrared broiler and I use that to roast my chicken. I just don't see the point of "spattering grease in" the oven that I have to clean up to save 20 minutes of cooking! YMMV. I will use the combi mode with frozen cooked food, ie casserole because it has already lost its "freshness" by being frozen...

Fortunately, I have a relatively large pantry (vs. a much smaller kitchen). So when I got the Miele Speed oven, I just moved my old Sharp microwave and my ancient, beloved, toaster oven into the pantry. Now, about 8 months after the remodel, I still use the toaster oven for toast, having never even tried to toast in the Miele. And the pantry's microwave gets used to do something quick (like melt butter) while the Miele is pre-heating, or baking, or whatever. Though these things only happen occasionally, its been often enough that I haven't seen my way to tossing out either old oven. The drawback, of course, is that there are 5 ovens in my little kitchen/pantry area, which seems excessive. And I suppose the pantry has less counter space for canned beans or whatever... As for the Miele's combination mode, I've only begun to explore this by using it to reheat things like casseroles -- Alton Brown's "Cauliflower Say Cheese", last night. Master Chef expects me to know how much these things weigh, which is a struggle, but last night's guess turned out just fine. Oh yeah, if you select Defrost mode, the Miele speed oven will heat in the range of 75 to 125 degrees. This setting is useful for cooking "raw" foods at 104. I did think about a steam oven as well, but there really was no way to fit it in there.

4082 Masterchef model is a "complete" oven.

It doesn't excel at baking cookies or biscuits only because there is only one baking tray and it's glass. You can purchase additional ones at substantial cost and or use a traditional sheet if you can find one to fit. You'd still need the additional racks to place the sheets on though.

Thank you antss, that was very helpful. The message seems to be that it will do a good job with just about anything that you can fit into the space (whether confined by the number of racks or the sheer overall size of the cavity). From what you've said I think we'll be fine with it.

One thing I haven't seen you all mention is the Turbochef? I am in the planning stages of my redo, and while I don't plan to install the residential wall oven, I am thinking about their new commercial standalone speed cook oven called the Sota. It is narrower, and I am hoping to fit it into a lower cabinet configuration. I have an appointment to see it at their test kitchen HQ in Carrollton, TX, Thursday. If anyone has questions about it let me know and I will ask. These are the ovens that are in Subway shops.

eco - that's because the Turbochef is an entirely different animal. Well the regular oven anyway. It doesn't have microwave functionality. I'm not familiar with the model you are talking about but from your description and what I know I can figure this out:

Turbochef doesn't have widespread distribution especially at the retail level.

If it comes from their commercial side even less awareness.

There are lots of problems with consumers adapting commercial products for in home use. It's not impossible, but most find it not worth the trouble and for manuf. it's a real PIA especially when you only do 2-3 a year.

There are lots of other choices to fill this segment, so...

that's why you don't hear much about that product.
