Viking range required trim, Why?

I am buying a Viking 30" gas rangetop, and I'm wondering why they are insisting I also buy a piece of overpriced "Island Trim."

As it happens, the rangetop isn't going on an island; it's going on a granite surface that abuts a fireproof ceramic tile wall (not just a backsplash.) I get that I have to buy the trim to get the stove, but is there any reason why I actually really need to install it? I mean, it looks to me like all it will do is collect grease. If I have the contractor install the rangetop at the specified distance from the wall, why do I need this unsightly piece of aluminum?
