Islay, here is what I have done: As I said, I incorporated part of the techniques of making Peking duck, which is to separate the skin from the meat. It was very easy using a long spoon to get under the skin. At the sametime I pushed under the skin lots of seasoning which I mixed in some 5 spice seasoning. Then came the boiling soy sauce wash. The duck was air dried in the refrigerator overnight. With a convection oven set at 170F, the chicken was roasted for about 8 hours. Then it was put in the freezer for about 15 minutes while the oven was being preheated to 500F. It didn't take long for the skin to be "Peking duck" crispy in the oven. dcarch

I got my husband and kids involved in doing something in the garden for me today. My son cleaned up some weeds and leaves; my daughter planted a few elephant ear bulbs; and my husband helped me remove and relocate one of my hostas. The removal of the hosta was quite difficult and hard work. But it got done, and I am looking forward to seeing whether the hosta likes its new location. Helping me with garden work is one of the best gifts they can give me!
