I believe it depends on your "style" of dishwashing! As my kids have gotten older and left home (I'm down to 1 and a half now!) I have fewer dirty dishes and prefer to wash them by hand. When I rinse a dish I like to rinse it under running water. Maybe I would dip it into a double bowl, but I don't have a double bowl. I have a one and 3/4 but am also in the market for a new sink. What I think you should do is imagine how you would takle your chore the next time you are rinsing or washing at your current sink. How would you do it at a single sink? A person can always take an extra plastic tub for rinsing and put it along side a single sink. Or rinse under running water right into the single sink. Or you may be like the majority (I believe) who just rinse and put everything into the dishwasher. I have a single sink up at our lake cabin and ironically I have more dishes up there because of frequent company. I put a plastic basin in the sink for washing and rinse under running water. I am not a fan of paper plates but then again I really don't mind washing by hand.

I love big sinks. Just has a conversation with the plumber last week. I personally like a large single bowl but my plumber, sister, and friends all say a double bowl is better. Wish I could fit a giant sink like you want. I have a Franke VNX160. It fits a 36in cabinet and has 2 bowls in a 2/3-1/3 configuration. The big side is large enough to soak the grates from the cooktop. The small side is large enough to rinse veggies, drain pasta and the like. My old double bowl was a PITA. It was about the same size as the Franke but had 2 equal bowls. Neither was big enough to soak anything large. I think there are 2 factors to consider. The first is how wide a sink can your space accommodate. If the sink base cabinet is less than 30in, you should probably go with a single bowl. The bowls in a double bowl will likely be too small. If the sink base is 33in or larger, you might want to consider a double bowl with the 2/3-1/3 arrangement. Take your casserole to the store to see if it fits. But when push comes to shove, just choose what *you* want since *you* have to live and work with it.

Tony, I have lived and worked and looked in Asia and am familiar with no hot water, no DW kitchens. That being said, I think a separate water source and prep area is extremely critical.. Especially in Asian style cooking, water is your most often used ingredient. Instead of a double bowl, I would suggest a single bowl cleanup sink.. Even 24 " would work or one of those IKEA sinks that are deeper front to back..and a small prep-sink (think a bowl big enough to wash spinach or 2kgs of veggies.) that is away from the cleanup area.. It is yucky to wash veggies near a pile of smelly dirty dishes. Especially without dishwasher, these dishes do tend to pile up until they are scrubbed and put away at end of the day. My friend in Mumbai remodeled her flat and added a prep sink and really loves it.
