Would you get 6 or 4 burners and why?

I am debating between a Blue Star 36 6 burner free standing range and a 4 burner range. I feel 4 would be mostly all I would need but the extra space is appealing even if just having a place to slide pots out of the way. What input do you have.? Thanks ahead of time.

I don't think I'd get a 6 burner stove just for storage. The difference in price is about $1000. You get 6 burners because you regularly have a need to cook more than 4 things on the stove at once. In my opinion Thanksgiving doesn't count, but it might for you. I have a 2 burner hot plate if I need that many things going at once, almost certainly one or two will be a simmer.

Also note a 36" oven will take longer to preheat than a 30".

A 36" 6 burner range or rangetop is useful if you have more than one person cooking at a time. Also, big pots/pans can take more than one burner's space.

A 36" oven will take longer to preheat, but ours (DCS range) can hold full sheet pans, meaning much more capacity. (We also have a smaller oven for every day.)

I chose the Cullinarian with 6 burners after agonizing for months over the decision. I ended up picking six burners for 2 reasons. One is that I like to mostly cook on the center burner because the range hood works best there if you are making something that requires a lot of exhaust. The second reason was that I figured I would buy a 4 burner Chef King griddle becasue I thought the 12" griddle a little small anyway.

Only just this week did I decide to go from 4 burners to 6 (combined induction and gas), but even though my kitchen is large, I hate to give up the counter space. Over the last 25+ years I have cooked for many very large crowds with a single 24" oven and a 24" cooktop. In several places where I've lived over the years, my prep space was barely 12"x24" (no exaggeration). It forced me to learn to plan ahead, cook what I could the day before or the morning of and only do at the last minute what really had to be assembled last minute. This way I wouldnt also be exhausted by the time the guests would arrive. For everyday cooking (pretty much always from scratch), habits of being organized and having a repertoire of recipes which cooked themselves paid off. Small urban apartment refrigerators were always more of a problem. When I finally got (for me) a large kitchen (which for GW standards was barely a butlers pantry) and a 30" range, I realized how inefficient and time consuming taking two steps from the prep area to the stove was, and how undisciplined I became in terms of using more utensils and space. Also, by then I had a dishwasher finally, and didn't have to clean up while cooking for mere space reasons, which also led to chaos. Now I have a large kitchen where it's possible for several cooks to spread out. And the 7-8 steps it takes me to get from my sink to my cooktop don't bother me a bit. I cook huge quantities at a time to store complete meals in the freezer for busy or lazy days. And although it's annoying that my oversized stockpot, wok, and skillet (all 13") can't be centered on their burners simultaneously, I somehow manage just fine anyhow. I wouldn't give up my double wall oven, though. I am about to change my cooking island (not the rest of the kitchen) because a huge crack appeared in my 30 year old corian countertop. So I might as well change cabinets and cooktop. I bought a portable plugin induction unit hoping I could work it into my setup to grow to 5 burners. But it's clutter and rather tall, and it seduced me into wanting a decent induction cooktop. So now I've taken the plunge, planning a 30" induction 4-burner, and a 2-burner gas unit side by side with a little bit of space between them.

How much Hood CFM to get for Wolf's 6-Burner Rangetop?

The necessary information may be found by searching this forum. To summarize: Obtain a hood that overlaps the cooktop by enough to capture the rising and expanding effluent. Assume for this discussion a hood with a 42-inch wide by 27-inch deep aperture area. This is shy of 8 square feet. Desirable velocity at the baffles is 3 ft/s, leading to a need for 24 cu ft/s or around 1400 cu. ft./min. Experience shows that only half this is needed due to baffle behavior in directing the effluent flow close to the baffles. (Or to look at it another way, only half the baffle space is aperture.) This consideration yields a value of 700 cfm. To actually flow 700 cfm, the blower needs to do so at some pressure drop determined by the baffle loss, transition loss, duct loss, and MUA replacement air flow pressure loss. For likely conditions, a 1200 cfm rated blower would be desirable. At best, a VAH hood's rated actual flow (600 in Homechef59's message) only avoids part of the pressure loss. It is not equivalent to a 900 CFM blower with a baffled hood except when each is hanging in air without a house and ducting. While a 1200 cfm rated system is recommended in this example, stepping down to 900 rated cfm may be adequate depending on what plume velocity your cooking effluent actually achieves, and what area of aperture you end up with. Some effluent escape (capture but missed containment) or effluent missing the aperture (missed capture) can be expected at some level of flow and/or hood shrinkage. Note that this basis for CFM estimation does not depend on the number of burners that may be in use at one time, but on the pan temperature(s). Every plume rises and has to be captured and contained, and the other hood areas not directly impacted by a particular plume do not help capture and contain it. kas

Well, arbitrary decisions have to be made. There is real competition at all price points, however, in order to survive in the marketplace all products need to be reasonably well made. You have infinite options- Stainless steel (hard to clean) or porcelain enamel (chips)? And the different suppliers differentiate by dong their 'thing': Wolf, red knobs and stacked burners, Thermadore - star shaped burners; Kitchen Aid, not a Ferrari but nothing to sneeze at and well made. Bosch, Etlectrolux, GE, Jenn Air, they are all fine. Natural gas cook tops are based on 100 year old technology. (not entirely true but kind of true.) You will be fine. Do not buy garbage. Get something that will not be out of style tomorrow. Not a sin to save money and buying a brand new scratch and dent etc.

I like extra space on a cooktop too, but the BS grates might be laid out well enough that you don't need the extra 6 inches.

The oven though...Chairthrower makes a great point. I decided against a range partly because I wanted a 36" top but not a giant 36" oven. Some people of course make use of big ovens and others use them so rarely it doesn't matter...

So, I got 5 burners (36") not because I needed the burners so much, but for sliding stuff around. But it's an easier decision with separate cooktop/oven than with a range.

I have to disagree with the second post. I don't think you should buy a 6 burner range only if you regularly need more than 4. As the other posts mention, larger pots reduce the effective number of burners you have available to you. Also, it's the one time you need 5 burners when you really regret not investing in the larger range. I've only had need for more than 4 burners a hand full of times and the other times, I do appreciate the larger surface. Sure, you can move a pot off to the counter but if it's a large stock pot, you may not want to even move it from one grate to another much less lift it off the range.

Finally, if you do any wok cooking at all, you can kiss at least 2 of the other burners goodbye if you've got a 16" wok. I've got a 16" and 14" and I've had opportunity to use both at the same time which is only possible with a 36" cooktop.

I was going to say exactly what amcook did so nicely. I love using my big (15 1/2" plus handle) skillet, 2 woks the same size as amcook's, and our dbl burner griddle/grill. Not everything fits neatly within the confines of one burner, and six will allow you to move things around and use the burners that suit you best in each situation. I have 8 burners and even with a family of 10 and at Thanksgiving, we'll probably never use all 8 at once, but do use the space of the entire rangetop, and do use all the burners at different times.

I have the La Cornue CornuFe, which has 5 burners, one of which is an 18,000 BTU central burner that fits even the largest pan. I love the 5 burners and also the 2 smaller ovens, which heat up so quickly and have fantastic multi-function options. Plus, it's gorgeous!

I selected a 6 burner range because there are enough times that I ran out of burners on the 4 top.

I look at it this way - I have never regretted purchasing too much but everytime I have gone to the other spectrum I have regretted it. I have said darn, that TV is just too big I wish I had gotten a smaller one. Or wow, this computer is just too fast I wish I had gotten one that is slower.

I also figure that I am not going to remodel the kitchen again anytime soon and the last thing I want is regrets.

It's a toss up depending on what's more important. The 30" has a 6" center section between pots, so if you only need 4 burners, you should be happy enough with the room for pots. And the 30" oven is already huge. The 36" oven will take longer to preheat- but if you have an electric wall oven to use- you can save the big gas oven for when it's really needed, then why not go for the 36" especially if two people are cooking on top. The 48" can be great because you have two ovens of different size and plenty of room on the top- but a bit of overkill if you also have wall ovens.
