Enclosing a refrigerator, and SS finishes

Hello --

Thus far, you at this forum have done much to dispel my ignorance -- thank you, thank you -- but as an utter beginner I still have a great deal to learn before I can create my new kitchen. Right now I am trying to decide on what kind of refrigerator to get, and I have two questions:

(1) Does it work to build an enclosure for a standard refrigerator that will make it look as if it were built in? I would like to build a fake wall within which I would recess a standard refrigerator. I have gotten the impression, though, that that can't be done because the refrigerator needs a place to vent. But it looks to me as if the fully integrated refrigerators have no grills or anything else through which they vent; if that's right, is venting necessary?

(2) Do any of the SS refrigerators have finishes or coatings which prevent finger marks?
