I had a funny encounter with an appliance salesman at Sears when I was shopping for a new range. (I ended up with the sealed burner Wolf -- love it.) When I asked about the ease of cleaning different types of range tops (glass, enamel, stainless steel, etc.) he said that the main reason people come back to the store and complain to him about their rangetop is that they don't seem to understand that cooking is really messy and that ranges have to be cleaned every time you cook, as quickly as possible. His comment struck me as unusually honest and so true.

Soapy water on a sponge works fine for cleaning the black enamel on the Wolf rangetop. Don't use any abrasion harsher than a blue 3M scrub sponge. The black enamel around the burners can look streaking if you don't polish it or buff a little with a microfiber cloth after cleaning. And the black, like any black surface, shows all the little light colored bits (sugar, salt, etc.) one drops on the stove top when cooking. Silver lining: you can see what you've dropped on the stovetop and therefore know to wipe it up (back to the wisdom of the Sears appliance salesman!)

My problem with accomplishing this seemingly common-sensical advice, is that right after cooking, while the food still has a chance of being cleaned up, the grates are HOT...and in the case of sealed burners with the dbl grates, I'd imagine they're extra heavy and awkward on top of hot. (I have open burners, so single grates.) By the time the grates cool, the food is cooked on hard. I can scrub the extra off, but not so that the shine is completely clean and restored. My other issue is that when something gets finished and needs to be cleaned up, I might be still using other burners, so again, a possible burn hazard. I admire you if you can be so disciplined as to clean up so fast and keep your rangetop so clean...But we're just no good at it, I guess. I'm just waiting until enough stuff is cooked onto the hateful shiny black surface so that it's all matte. ;-) I'm not kidding...

But it is a wonderful cooking tool!!

We went shopping for ranges originally intending to buy a Wolf AG, but the salesman's comment that the great thing about the Wolf was that you could easily purchase a replacement cooktop when it gets "too grungy" made us back off. Why would he tell us this unless this was a big problem?
We ended up ordering a Bluestar. Easy clean-up for people who don't like to clean.

I think francoise47 stated what I have found (in my two months). Also, in addition to soapy water clean-up after a big (greasy) use, I'll finish off with Signature polish. A sample of this came with the Wolf rangetop and I now use it on all stainless steel, plus the black top. I'm now going to look at that video. I love the Wolf rangetop.

I've had a 36" propane rangetop (no griddle) for abour 5 years and have no problems with cleaning. I might not be as compulsive as some, but it seems to clean up nicely whether soon after cooking or later. I wouldn't hesitate to buy another when the time comes (which is unlikely unless I move, since it's so solidly built).
