Thermidor gas or dual fuel range vs Wolf gas range
Comments (3)When I started my research for my kitchen remodel (about three months ago), my initial thoughts were strongly towards Thermador (for the range and refrigerator), and Wolf (I eliminated Viking due to quality concerns, and I hadn't yet heard of many others like BS, American, DCS, Aga, etc.). Then, I noted that Thermador doesn't offer all gas or open burners, and I better understood that my use of the oven didn't require the electronic functions (nor did I want the risk of having them burn out), and I thus eliminated Thermador even though I love the look (but function is much more important to me than style and looks) and it's star-burner shape does make it probably the best of the sealed burner options (ignoring output) IMO. If one wants to be a better cook, and understand the need of function over looks, then I can't see how one can pick Thermador, given the choice. I would pick BS or Wolf all gas instead. Comments (6)"And should you have to?" - I have a BS range top w/ 6" SS back trim and the scorching comes from when I don't wipe down the SS after cooking, then the residue gets 'scorched on' by the high heat of subsequent rear burner use. I used to get nasty scorch buildup (?) on the SS backsplash and would occasionally have to labor with hot water and barkeepers to get the SS clean again. Eventually I figured out that if I just give the SS a simple wipedown after any sort of splatter or fry type cooking I avoid the scorching completely....See MoreCleaning Wolf 36 gas range GR366
Comments (13)Hannah, I don't necessarily clean it after each use. It really depends on how messy it's gotten on any given day or week. I might leave it go if I know I'll be using the burners that night or the next day, and can just tackle the cleaning afterward. It was a trial and error thing early on, as to how to clean/what to use on the burner pans so they wouldn't look all smeary. At a Wolf Showroom cooking demo, they had recommended the Perfect Kitchen spray, which worked well. But I'd started mixing up and using my alcohol-water spray on my granite counters, and then tried it on my SS and on the burner pans, and it worked well, so I just started using that. I do clean with a sponge first if it needs it, but if just lightly "soiled" or dusty, I just use the spray. My grates don't look new or pristine, and some of them are pitting (rust spots), but they aren't covered in food residue or anything (I do wipe them occasionally, or as needed, like I said). They just look well used, which for cooking grates, is just fine IMO. Comments (9)Do you use a griddle now? I would consider an overlay griddle instead of a built in. The one I have(Royal industries)is 15”x23” and is about 50% bigger than a 2 burner built in. I have a Wolf range. It can be bigger because it is made of heavy aluminum which has much better heat transfer properties than steel so heats more evenly. It comes in bare aluminum which seasons over time and nonstick. With a built in you have about half of the power, somewhere around 15K BTUs. You can set the griddle anywhere you want or you have the flexibility of using all six burners. I have picked up my griddle and put it in the oven. You can take it to the sink to clean. These are Royal Industry overlays. They are pretty inexpensive. http://royalindustriesinc.com/index.php?main_page=index&cPath=4_22_48 Chef King makes a similar griddle out of steel. With the built in, you have a thermostat so you can repeatedly turn it in to a certain temperature and get that amount of heat. If you go this way, look how the different brands are built. Wolf uses an infrared burner to get a more even heat. The steel is twice as thick as BlueStar. BlueStar uses this burner on the RNB griddle.
