choices of wood for trim

We're doing a craftsman bungalow in the mountains of NC and we want to use stained trim for all of the interior woodwork including a wainscoting in the dining room. Problem is I don't know what type of wood I really want to use. In fact I'm so clueless that I don't even know what to tell my contractor to price out much less what to put in the contract. Here are the particulars: I want the trim to be evenly stained in a medium to dark color, not rustic (absolutely no knots!) and not exotic (read...not super expensive.) What would be my options in the North Carolina region for a clear durable wood that will take stain nicely? The floors will be select white oak, the windows will be fir, and the cabinetry will be quartersawn oak. I guess the choice of wood for the doors will be price driven to some extent but surely I will need them to at least blend with my trim, right? What do you suggest?
