Question for Try_Hard re: Induction Cooktop
Comments (6)Thanks, try_hard! My wall oven is now installed under the cooktop so I don't hear the fan any longer, but after I typed this post I thought DUH....it's got electronics just like a computer so of course the fan would be on most of the time. I like my cooktop ALOT....and actually I didn't get it so much for the speed as for the control functionality that was similar to gas cooking, sleek look, and ease of cleaning. So far it meets all those requirements with a 5 star rating! My husband already says things taste better cooked on the induction (could it be in his mind???) What do you use to clean your cooktop? I currently use the small bottle of cleaner that was included with the cooktop, but I'm wondering for future if there's something else on the market that might work just as well. We have been cooking on an induction cooktop (two different makers) for a dozen years, and the only buzzing pot we have had was a Demeyere Apollo (the 1.7 qt saucepan with the seven-ply bottom), which has buzzed on both hobs -- but not all the time. It is not a big deal for us. We have two other Demeyere Apollo pans that never have buzzed, so it is not brand or construction that is determinative. When the buzzing pan is in its buzzing mode, it buzzes from the moment it goes on the burner cold until we remove it hot, so it is not the temperature or the transition through temperatures that is determinative. The induction process oscillates a magnetic field, and I am pretty sure that the cause of the buzz is the excitation of a bell mode in the pot from a harmonic resonance of the inverter's oscillation frequency. Our most responsive induction-ready pot is a Mauviel unit that clads mild steel (or iron) with stainless, but Mauviel apparently does not make that line (Induc'inox) any more. A Matfer Bourgeat "black steel" frypan is also a winner (and was a real bargain to purchase). Comments (8)I have Gaggenau, which is made by the same company as Bosch, but all induction units are pretty similar. I'm concerned about the instructions you have, however. For deep frying you should never use top heat. You don't want to overheat your fats. They can catch fire. You can use the high numbers for wok cooking where you're constantly adding cold items to a low volume and need to return to high heat fast, but even then you need to be careful not to overheat and scorch your oil. My unit will boil peanut oil on number 6.5 or 7 if there's no food in it. If the oil is boiling it's already past the smoke point, and is breaking down, chemically. Not good. Power boost is especially for boiling. What it does is use more of the incoming current just for the element you're boiling on, for a limited duration (usually 10 minutes, maximum), so that you can boil faster. On my unit as well, when I don't use boost, it takes a good while to develop a boil. With boost it's impress the neighbors time. This is good for one's cooking because there are some things one wants to bring to a hard boil, but slowly, and there are pots of water that one just wants to get boiling already. Just for clarity (you might have meant the same thing, but I just want to be sure), about the pan touching the glass, my old favorite pot has curved sides. Chefkev once explained why it was such a great shape for cooking from a food science point of view, but I forget. It's not so great on the induction because a smaller part of the bottom is in contact with the glass. My old not so favorite pot, which I've had about as long, is my new favorite pot of the same approximate size, because it has a very flat bottom which has more area in contact. Try the power boost. Comments (14)Thank you ALL for your responses. Each has helped clarify add'l thoughts I've had and brought up new ones! I THINK I've made a decision about what I need to do. As of this moment, I'm going to buy a 30" black glass induction cooktop - 4 burners. When I want to use one of my non-induction pans, I'm going to use a heavy-duty gas, 12,000 BTU portable unit that runs on Butane (1 hr. of continuous high BTUs usage; 2-3 hrs. for medium)! It's clear that my needs for those won't be often, but it WILL solve most of my issues that were bothering me and I won't have to give ALL of my favorite pans away that I so feared. And I'll still have access to BOTH induction AND gas (my original duel-fuel passion)! The reviews for this particular 12,000 BTU gas unit were outstanding and it's cost is less than $50 for the privilege. I was considering the Bosch Flexinduction or the highly praised (by reviewers) Frigidaire FGIC 3067MB. But, now I've noticed here the Bosch 800 being discussed for less $$ than the Flex if one doesn't need the flexible pods (which I don't, really). Frigidaire has about all the goodies EXCEPT individual burner timers at around $1100 or so with just terrific reviews on amazon - an amazing price point. Can anyone point out some detriments of these three that I may not have noticed or be aware of?
