At one time Virco was telling people that you needed a regulator with the NG conversion kit. That is un-true and you can hook your gas line directly into the unit. After I did the conversion I needed to adjust the burners to get a higher blue flame.

I am no expert but I had a regular slide in range of the GE line of nice, but builders grade (not pro-style) range in NG. I bought a similar, but not as nice model, for a cabin that had to be converted to LP b/c there is no NG. The conversion kit and instructions came with the unit and I did it myself but had my then neighbor who was a HVAC guy inspect it. His comment "As long as you remove the jet insert with the big hole (about 3/16 inch) and put in the jet insert with the small hole (about 1/16 inch), you are fine. However, to make a mistake is really bad." When you compare the jet orifices, it really is not hard to tell which is right at all. Anyway, he passed my conversion as fine. Installed, I could not tell the difference b/t the LP and NG as far as performance, but, again, that was not a pro-style unit. With my Wolf and now Bluestar, they were/are NG so I cannot compare but I do know BS comes configured from the factory. BTW, although it was really very simple, I do not recommend doing the conversion yourself unless you are qualified or have a qualified HVAC/gas tech inspect it (FWIW).

Its understandable to deliberate such a reasonably permanent decision and its good to make sure you ask everything you can think of. You are looking at a great unit and I have never really heard anyone compain about LP performance in these units or similar ones. You will find the 36 inch oven a bit of a chore to pre-heat I am willing to bet. Mine was a Wolf and it took a while and I have heard the same from others who had 36 inch ovens no matter the make. That said, it IS NOT that big of a deal. If I had to choose b/t the 30 inch and the 36, it would be the 36 hands down in any model. If I could choose b/t the 36 and 48, given what I know now, it would be the 48 to get the 30 inch oven and the small turkey oven. As mentioned, my last was the 36 Wolf and it was great. This time we went with Bluestar and have not the least of regrets. We would make the same decision again no matter the size. Additionally, I have heard fabulous things abut BSs new white glove service. That would certainly give me additional assurances as well. No need to medicate,just get your unit in and enjoy it, you should find that will be medication enough.
