regluing and refinishing an old table

Hi, I have a great trash day find-- all the pieces to an old quarter sawn oak table. There's lots of pieces but definitely repairable.

Seems to be the old water-soluable hyde glue. I have removed pretty much all of it except some seems to be into the grain of the wood in some places. Will the new glue still hold or every molecule of the old glue be removed? Can I use Titebond or a modern elmer type glue or must I use hyde glue again?

How would you finish it? It was a nice dark shellac-- I'm kind of afraid of shellac bc it seems kind of hard to apply without it being streaky? On the other hand it seems that the modern stains just don't get that rich dark color. Any suggestions?

Some places are pretty worn down to bare wood - the table top is especially horrible and I'm tempted to sand it down more... Yah, I know youre supposed to not sand but the top is pretty far gone-- actually the top is in pieces which are all warped so I'll first have to unwarp and glue the pieces together.
