Three holes for single-hole faucet! Options?

help - my countertop installer drilled three holes for a single-hole faucet in a piece of Silestone. The faucet was right there in the bathroom, but they just did not look at it or ask me before drilling - so it is their fault.

But, before I insist they replace it, I know they may offer me a discount to keep it. So what are my options? I don't really want to change to a faucet with separate handles.

I could:

1) Put in something else in the holes, like a soap dispenser. But what would I do with two soap dispensers in a bathroom for an 11-year-old boy?

2) Buy an escutcheon to match the faucet to cover the holes. Not preferred - it looks like a retro-fit.

3) See if they can get some thin (maybe 1 cm thick) Silestone in the same color, and they could fabricate an escutcheon. The matching escutcheon isn't nearly as objectionable to me. (But I'm guessing they can even do that.)

Other ideas? Comments on my options?
