Etiquette when a project collapses

For several reasons, my custom home project is now officially dead. I have not signed a contract with the builder.

While I realize builders don't get every house they work on, I feel he has gone above and beyond. We've bid the house out 4 times, he was involved in the design phase and this thing has dragged out for a year, and that entire time he's been professional, patient and responsive.

Other professionals involved have been paid for their time. I feel like the GC deserves some compensation, but I'm not sure how to proceed. Do I offer to pay him for his time? If so, how much? Or do I buy him a nice gift, and if so, does anyone have any ideas? He's not a swing-the-hammer type and I don't have a clue what his hobbies and such are.
