9x13 inch induction friendly pans?

So I have the induction with the bridge. It's all good! My new induction cookware works great. So, I take a cake pan to slow bake some ribs. There is stuff in there for gravy.

With the old gas stove, no problem. Stick that baby over two burners, stir, and I got gravy!

Not the induction. It doesn't recognize the 9 x 13. NOT ONE SET OF INDUCTION COOKWARE INCLUDES THIS PAN!!!!

So, how do we deglaze the pan and make gravy?

Life has seriously changed!

I have no experience with small roasting pans other than pyrex 9x13 which, obviously, are not for deglazing on induction, but the topic has come up from time to time.

Seems to me that somewhere last year I saw something about Viking having a smaller, induction capable roaster in its line of cookware. However, I think I've also seen something recently about Middelby (the new owner) having decided to cancel the Viking cookware brand. Might try Amazon to see if any are left.

Also, it seems to me that All Clad used to have an induction capable roasting pan but they called it a "lasagna pan."

If you can go a little larger than 9x13, there may be more choices.

Would induction disks under the pan work? I've heard of some folks using these with specialty cookware. (Not that your pan is a specialty item, but it's not a cooktop item either).

After having such a horrible experience with the Kenmore electric range, I am afraid to try Kenmore again. Still have some extended warrranty left which will transfer to the Samsung. I have had great luck with my other Samsung appliances, so I hope I do with the range also. My husband laughed at me when I told him that the appearance of the Kenmore just left me cold, but when he saw it, he felt the same way. Blah. Can't put my finger on why. gscience chick, after baking I usually leave my oven door cracked open in the winter anyway for the heat boost to the kitchen. My son uses Circulon Infinite pans on his induction and really likes them. (Interesting to get cooking advice from my son!) In browsing the net, Circulon has a 25% off sale this month as well as deep discounts on the Infinite (looks like Symmetry will be replacing it). I found an 11 inch skillet for roughly $18 and a twin pack 10 and 12 skillet for $36 (Symmetry), etc. Then on the potsandpans.com website I was able to find the 3qt saucepan for a really good price. I have a few pots and pans that I can use from before (I hope). Two of them have 8 3/4" bases - hope I can use them . . . I love my Calphalon Contemporary saucepans and hate to lose them, but I see that they are coming out with a Contemporary IH line (induction friendly) - in Australia, but not here yet. Maybe soon . . .? Guess my life is kind of dull when I can get so excited about a new range! Any hints and suggestions will be appreciated!

My cooktop buzzes a little no matter which size pan I put on which size hob. Not everyone has this experience - it depends on the brand of cooktop and the type of pans, how full they are and how hot they are. I haven't noticed that it matters if the pan is too big for the hob, and I wouldn't describe it as horrible buzzing. I know that not many places have demo induction, but do try to find one, bring your pans and some water to fill them, and listen. The buzzing doesn't bother me as much as the clicking, and the clicking, as far as I can tell, seems to be unique to Kitchenaid. By all means, avoid Kitchenaid induction. I cooked on an old Tappan gas range in a rented cottage this summer, and that gas made noise, too. It hissed. And the gas wasn't nearly as adjustable as my induction cooktop. An old Tappan is no comparison to Wolf, and a built in griddle, or a grill, like a Jennair, are wonderful features. But induction is pretty wonderful, too, for other reasons. The biggest one is probably ease of cleaning, and there are threads that list the many benefits, which I'm sure you've seen. Some people still find that a gas cooktop or range better fits their requirements, but don't be put off by the stories of induction's noise (except KA's clicks) or the lack of a built in griddle. Induction rocks.

brianvarick: The toroidal field extends above the coils through the glass/ceram and into the air above the glass. Potentially, without any inductive material, the field would extend up to almost half the diameter of the hob. The field lines will be attracted by an inductive material. If this material has the correct properties for good power transfer without overheating the control electronics or coil, (this is tested by the cooktop), the cooktop supplies power to the field. If you recall your eighth-grade science experiments with magnets and iron filings, the lines will preferentially converge on the inductive material. I imagine that there is some power loss as the gap above the glass is increased, but minor warping, and indeed use of silicone pads to support the pan, seems to have little effect on power transfer from field to the inductive pan base material. cpartist: My commentaries are intended to be instructional with the hope that ventilation seekers-of-truth will be able to extrapolate to their particular situation. I don't know your particular situation, so I will have to guess at one to give an example. I assume that you are going to mount the hood in the range of 30 to 36 inches above the cooktop. I assume that you will provide a sufficiency of make-up air to meet my assumption below about effective CFM vs. rated (zero static pressure) CFM. So, we start by making the hood over-sized for the cooktop area to capture the expanding effluent. A nominal size would be 42 inches by 27 inches. (24 inches might be sufficient against a wall depending on cooktop placement relative to the counter.) We will pretend here that this is also the aperture size, which is just under 8 square feet. I recommend a specific flow rate of 90 cfm/sq. foot making the total demand a bit over 700 cfm. I anticipate, therefore, that all of the pressure losses in the system from cooktop through baffles through ducting and transitions, roof cap or roof blower to the outside and back through some nominally sufficient MUA path, say 0.2 in. w.c., will cause the operating point on the fan curve to be 700 cfm. I guess (without having the particular fan curve of the candidate blower) that this condition will be consistent with a blower rated for around 1.5X this value or a bit over 1000 cfm. Depending on what you cook and how hot you cook it, and given induction tends to have lower effluent velocities than gas, and given that most hoods have aperture sizes somewhat less than their overall sizes, you might be satisfied with a blower rated as low as 800 cfm. A common rating for blowers in this range is 900 cfm (see, e.g., page 128 of the Wolf Design Guide). kas

I second Grainlady's recommendation of the Farberware Millennium nonstick skillets. I've got two of them in different sizes. I also picked up an Oneida nonstick 12 inch skillet from Bed Bath & Beyond several months ago. So far, I'm pleased with it. One thing I really like is that it's lighter than my previous KitchenAid 12 inch pan. Much gentler on my wrists. I've had good luck at TJ Maxx (as mentioned above), Target, and BB&B. I'm pretty much set for induction friendly pans now, but I used to always carry a magnet with me when I was actively shopping for them. I'm sure other shoppers thought I was nuts, going around sticking a magnet up to all the different pots & pans.

LG Electronics ships in the box with every LCE30845 induction cooktop a griddle -- which has a substantial lip around the rim -- that works with the cooktop's bridging elements; the griddle is about 19" x 8". We have the cooktop and the griddle and the griddle (as the English say) "works a treat." See the link below. It cannot hurt (probably will not help) to call LG and see if they will sell you a griddle apart from the cooktop.

Failing that, you might investigate if the Vollrath 77541 will fit on your cooktop. The '77541 is 21" x 16" -- which is a whole lot of griddle, but it is induction friendly.

What about using a graniteware roasting tin?

It's enameled steel and should be induction capable.

At our (rural area) hardware store this morning, I saw a Graniteware "lasagna pan" that measured 14" L x 9" W x 2" deep. The store owner showed me a Graniteware catalog that listed "Bake Broil and Grill Sets" which includes the 14x9x2 pan, a perforated top tray (broiler pan), and a baking rack. There is another that is11x8x2 and something called a " 3 Piece Everything Roaster Set" which appears to be 13x9x2. A magnet stuck to everything in the store, so they all should be induction capable.

A quick internet search indicated that the 13x9 "roaster set" is available at Bed, Bath and Beyond for $22. Probably available lots of other places, too.

Another thing that occurred to me is to check the broiler pan that came with your oven(s). Mine holds a magnet like the graniteware.

I'd take the magnet to Sur La Table or a restaurant supply house and try it on anything that takes your fancy. I did find some listings for induction roasting trays.
