I decided to go with the Eurocave for the following reason: 1. In addition to temperature, it also monitors/controls humidity. 2. The posters over on the cellartracker website forum had a lot of very positive things to say about the Eurocave. It is apparently very quiet and it sounds like it will do what I want. Those guys seem to really know their wine. 3. When I was on the phone with the Eurocave salesperson asking questions about the device, he gave me a 10% discount and free shipping which made it cheaper than the Perlick. I looked at the Liebherr online and it looked like it is also a good choice. They however seemed more directed towards the European market and I wasn't certain where I could get replacement charcoal filters. PS: I did some more research on basements here. It turns out they are not outlawed, just no one has them because they are cost prohibitive. I suspect it has something to do with the costs of digging out sand and still making the house/bluff stable. I, however, read that Mitt Romney put one in, so if you have the money, it sounds like it is possible.

Oh, if you use the recipe frequently you can get a bottle of decent wine, use it for the recipe & freeze the remainder in appropriate quantities for the recipe you mentioned.

I don't claim to be an expert (though I have been making my own beer and wine for 20+ years) and the wine experts/connoisseurs are probably going to cringe at this suggestion. My husband and I prefer dry wines too. However, our lovely daughter detests dry wines (she's more of a Boon's farm drinker). Since we usually have close to 200 bottles of wine on hand at our home, I'm not about to go out and buy a cheap sweet wine when she comes home for a visit. The solution to the problem is simple.........she pours herself a glass of whatever we have open and then sweetens it to suit her taste with sugar. We have a lot of friends who prefer sweet wines and I have shared our daughter's little secret with them. They have all tried it and rave about the improved taste of the wine. While the connoisseurs will turn up their noses at this suggestion, it does work. It's just like iced tea.....some like it plain, some like it slightly sweetened and some like it extra sweet.
