viking 30' steam/combo oven

has anyone seen the new 30" convection/steam from viking? I installing a 48" Wolf d/f range and want an extra wall oven, but not just another convection. I love the idea of steam (with convection) but miele's is so small at 24". Gaggeneau also makes a 30" combo steam...any experience with these?????

I saw the Viking combi oven in action last weekend. The company chef who was demo-ing the oven steamed some fresh asparagus ( it was wonderfully crisp tender ) and also steamed frozen shrimp. The food was very tasty and the water from the steaming was not green, hence less loss of nutrients from the asparagus. I also was told it can proof bread as well as doing a fabulous job of baking artisan type breads. Reheating leftovers is supposed to be one of the big pluses for this oven, too.

The oven was a 24" with a 30" trim to stack it above a convection oven. Have you heard the combi oven comes in a 30" width?
The Gagg combi oven comes in a 30" width at a much higher price than the 24" Viking oven.

I'm going to put the Viking combi oven in my kitchen remodel.

The Gagg is also 24 inch. The 30 inch version simply has the larger trim.

Thank you both for your thoughts. I think you are right. Black and stainless look really nice together and the wall oven does go with the cooktop. I am trying not to test my husband's generosity by going overboard and trying to be sensitive to his needs (even if he really NEVER cooks!) because he likes the look of stainless. We have a 25% chance of the Thermador having problems, but I guess that is the chance we can take. The appliance store will fully warranty it for 5 years for $29. It seems like a good compromise to get such a nice unit for the money. I spent the last several days researching lots of brands and just getting a micro/wall oven combo (Bosch, GR profile or Electrolux) is going to be 3k. I almost sprang for it, but it is just hard to justify. I think I am going to just do this and move on to the next decision, like our countertops. We found incredible custom cabinets on Craigslist that were built 3 years ago by a cabinetmaker and removed by the new owners. We only paid $1,500 and they are all wood construction with dovetailed drawers. So this savings is going to allow me to do a really nice remodel for a reasonable $25,000, which in our neighborhood is all we really should spend to keep our investment. Thank you! I am calling with my credit card this morning to just go ahead and buy the Thermador and keep my fingers crossed that it works. :)

When I was single, I lived about five years without a microwave. I could probably do that again, if it wasn't for the kids. They want an appliance that can quickly heat up their beverages (mostly milk). I also love the fact that I can quickly thaw things in a microwave, whereas most other appliances have more difficulty with doing that. When I grew up, my family always had a speed oven (in fact, they still have it; it's about 30 years old now). The speed function did get used. But it was only for a very limited number of dishes. I distinctly remember that scalloped potatoes were a breeze to prepare, and tended to come out better than when cooked in a traditional oven. So, yes, even though I am not a huge fan of a microwave in general, I do see the utility in both plain microwave and in speed oven. It's just not super frequently, and most of the time it can be substituted by some other appliance. On the other hand, a steam oven has a lot of use for day-to-day recipes. And there really isn't a great substitute, as there are no other cooking techniques that easily and accurately control moisture.

The worse installers and product ever. Had whole kitchen installed and they never hooked up the water lines to 3 ovens. They have been back at least 5-6 times and cannot get the combo steam oven working, its been a year and at least 30 phone calls to service, with promise of return and ok to swap out with a new one- 2 months ago- and still now one at Miele will take ownership of this issue and exchange the lemon. Incredibly poor performance for a company that bills themselves as the best product and customer service. Service managers refuse to speak with me, only front line folks (who are very nice). Go with Wolf- I spent $45K on Miele and I regret it ever since the installs 1 yr ago.

The Gagg steam/bake combi ovens all have the same size interior. Just the outside changes to fit 24" or 30" spaces. The Miele is a bit smaller, but doesn't have convection bake like the Gaggenau. I just saw KitchenAid has a "steam assist" double oven that looks like it does what the Gagg does, but in the traditional double oven cavities. Does anyone know anything about the KitchenAid steam assist oven? Model KEBU208SSS, Architect II Series, 30" I thought I might do a steam oven over the single 30" oven instead of my double oven, but am not sure I can do holidays with a "small" oven and only one full size oven. Thoughts anyone?
