LOOKING for: Jerky

I have been interested in making jerky. My family loves it and buys it wherever we go. Does anyone know how I would go about making it? Thanks!

Well - Do you like a sweet teriyaki style with or without 'heat'. Or ???? I prefer Teriyaki style myself and add a bit of spice/heat with blk. pepper and/or a bit of red.

Some with heat...yes. Teriyaki will work, too. It just has to have a really good flavor-make your mouth water stuff. We buy the homemade a lot and they don't really have a name...it's just really good. Fiance doesn't like the store brands. Sorry, I don't know exactly what kind it is. If there is a flavor you think is pretty good, I don't mind trying that one.

This may be more like what you have had. It isn't twice baked like the previous recipe and has a little less sugar and a little less flour making it less dense. One of the secrets of this kind of cookie is to chop the almonds..not to a powder or teeny pieces, but enough to release some of the nut oils which makes for a dough that is easier to mix. I'm not a big fan of almond extract, so I have cut back some, this recipe called for more...and you may like that really almond-ey taste, so add another teaspoon or two. Linda C Almond Slices 3/4 cup sugar 2 cups all-purpose flour 1 cup brown sugar, packed 2 eggs -- beaten 2 teaspoons baking powder 1 teaspoons almond extract 3 cups almonds -- chopped 1/3 cup oil 2 teaspoons water 1 teaspoon cinnamon -- optional Mix all together, shape into flattened logs, brush top with beaten eggs (not those included in recipe). Bake 350 degrees for 19 - 25 min. (watch carefully). Cut while warm.

Boy, does that sound like a fun program! Here is a recipe I LOVE. I love cabbage, apples, and caraway together, so I searched for recipes on line and finally selected this one, printed it, made it, and filed it away with my own comments and changes. Then I forgot I had it, and went through the process all over again a couple of weeks ago, searching, selecting, and printing. When I went to put the new recipe in the file, I laughed to see that it was the SAME one I had printed out last time -- and I had made the SAME notes and changes! Both times I had felt the dish needed both more caraway and some sweetness, for which I added concord grape wine, which made it perfect, in my opinion. It made the flavor much more complex. I will give you the recipe as I found it, with my changes in brackets. This recipe doesn't have bacon (no recipe you ever get from me will!), but you can probably add some if you like. Warm Red Cabbage, Red Onion, and Apple Slaw 5 T extra-virgin (only) olive oil 3 T balsamic vinegar [I like more] [a good splash of very sweet red wine, or maybe try some grape jelly or brown sugar] 1/2 head red cabbage [I used white once and it was fine] 1 large red onion [I used white once and it was fine] cut into 8 wedges [I cut it smaller] 1 t caraway seeds [I think it needs a lot more] 2 Granny Smith (or any tart) apples cored and cut into 8 wedges [I cut it into smaller pieces] salt and pepper to taste 1. Cut out the core of the cabbage and cut the cabbage into small pieces [I shred it] 2. Warm the olive oil in a large frying pan over medium heat. 3. Add the onion and cook, stirring occasionally, 2 minutes. 4. Add the cabbage, apples, caraway seeds, and vinegar [and wine or sugar]. Stir well. 5. Cook, uncovered, 4 minutes, stirring occasionally. 6. Season to taste with salt and pepper when the cabbage is soft. 7. Transfer to serving bowl and serve immediately [I found it just fine serving it later].

It has depended on where I lived. Not on any other factor and that is weird when I think of it. When we lived in Montana, it was Creamette. When we lived in Virginia, it was Barilla. When we lived in California, it was Lunardi Homemade. When we lived in Washington, it was Angelina's When we lived in New Mexico, it was DeCecco. Now, I buy Barilla and DeCecco most of the time, and I love Creamettes too. I have a friend who cannot eat wheat products and at her home, she uses rice and other grains that make the pasta. She gets one that is a mix from a local natural foods store that is delicious! It is buckwheat, and rice.. and soemthing else. The color is ugly, the flavor is delicious!

Here's a buttermilk cornbread recipe. Hope it's similar to what you were looking for: SPIDER CORN BREAD 1 1/2 cups cornmeqal 1/3 cup flour 1/4 cup sugar 1 tsp baking soda 1/2 tsp salt 1 cup buttermilk 2 eggs, well beaten 2 cups milk, divided 2 TBL butter combine cornmeal, flour, sugar, baking soda & salt in a large bowl. Add the buttermilk, eggs & 1 cup of the milk. Beat with a spoon until smooth. Melt the butter in a 9" heavy skillet. When the skillet is hot, pour in the batter. Pour the remaining 1 cup milk over this. Bake in a preheated 350Â° oven for about 50 minutes or until lightly browned. cut into wedges & serve.~~Hancock Community Collection

Beef Jerky

3 pounds top round London Broil, trimmed of fat
3 tablespoons salt
2 tablespoons coarsely ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
Cut meat into strips a little less than 1/4-inch thick. Place strips in a shallow bowl. Combine salt, pepper, garlic powder, and onion powder in a small bowl. Rub spice mixture into strips. Cover loosely with plastic wrap, and marinate for 48 hours in the refrigerator. Remove a rack from the oven. Preheat the oven to 115 degrees. Remove the strips from the marinade and lay them directly on the oven rack so that air can circulate around them. Line the bottom of the oven with aluminum foil to catch the drippings. Place the rack in the oven, leaving it partially open to maintain a constant temperature of 110 to 115 degrees. Leave the jerky in the oven until well dried, 6 to 8 hours.

Note: The USDA recommends cooking the beef jerky at 160 degrees for the first 4 hours and then reducing the temperature to 130 degrees during the dehydrating process.

Yield: approximately 1 pound dried jerky
Prep Time: 48 hours 10 minutes
Cook Time: 8 hours

Been making Jerky for several years, usually from rump roast that I asked the butcher shop to slice for me or from wild game that was given to me. I used to trim off the fat, marinate the meat for 12 hours and then add spices and put in it my dehydrator. This year I purchased one of the NESCO Jerky Makers from Wal-Mart. It's easier, faster, cleaner, and makes excellent jerky. Looks like a small caulking gun and has three different attachments for different types of jerky (Large round, small round, and flat). Buy lean ground beef, mix in the spices and curing that comes with the unit (along with anything else you desire) pack the mixture in the gun and shoot out the product on wax paper. Lay the product in your dehydrator and dehydrate for approximately 10 hours (I turn mine over and move the trays from top to bottom about half way through the process). Tastes great, no waste, and easy clean-up! Good luck!

Dash of Liquid Smoke
2 parts soy sauce
1 part worcestershire (I've been cutting this part down alot)
black pepper
red pepper to taste
tons & tons of brown sugar (I've been toying with using bulk Splenda sweetender - you can cook with it as opposed to other types - and it has come out pretty decent).
