Family camping trip, minimal packing room, help!

Hi all! I am planning to take my family (2 adults, 2 children ages 4 & 1, one dog) camping this summer for a week. It's our first camping trip ever, but we will have other family members who are camping at the same time.

What I'm trying to figure out right now is how to fit all the stuff into the car with us. We have a rooftop cargo carrier which is big enough to hold the equivalent of 4 rollaboard carryon-size suitcases (to give you an idea of the size) plus room in the back of our SUV to carry about 2 Rubbermaid bins.

So I'm hoping for advice from you experienced family campers out there: What are the bare essentials to take with us? What can we leave behind?

I'm already planning to take one or two coolers with us, but pack them with other items, and purchase our food and ice once we arrive. Any other tips?
