"high acid" for canning purposes, since "low acid" tomatoes are insufficiently acidic to be canned with a boiling water canner and require a pressure canner instead. Sorry but current NCHFP/USDA guidelines allow for BWB canning of tomatoes - pressure canning is optional. All tomatoes, regardless of variety, are treated as low-acid when it comes to home canning because all varieties fall below the safe pH acidity level. Thus the requirement since 1970 to add either bottled lemon juice or citric acid regardless of the processing method used. Sounds like you have great habitat for many birds, towhees included. If you learn their song & it's an easy one "Drink your tea" & then just "Tea" or "Towhee", you should be able to see them more often. They love to hang out under feeders & do that chicken scratch shuffle they do. I prefer the old name "Rufous-sided Towhee" as it describes the bird. Susan
