How much can I prune my Plants before it's too much?

I have a nice tomato garden that turns more and more into a jungle as the season progresses. I cut off some of the biggest leaves and some branches only containing leaves just to make it easier to walk through and see tom's. But 2 days ago, while walking through cambridge, I saw someones tomatoes growing and they had been trimmed so much that the lower 3-4 feet had no branches of leaves whatsoever, and only the uppermost branches had any leaves at all. These were red cherries and yellow pear cherries, and there were many tomatoes ripening where there was no foliage. I would love to trim my plants as much as this, but am afraid to since I thought photosynthesis was important. What do you pro's have to say? How much pruning is too much pruning?
