I posted these pics on the New England Gardening Forum but I thought they would be of interest here (and more appropriate, to be honest, although the New Englanders have a very broad understanding of what belongs in a garden).

I often have Wild Turkeys visiting the areas where I spread seed on the ground for whatever is hungry. The turkeys are particularly fond of nyjer seed and there were 12 turkeys feeding today. They're used to me - most of the current flock probably grew up feeding in my yard so they're pretty relaxed here.

Today there was a cold northwest wind in the front yard and, after feeding, the turkeys sensibly moved to the back yard which is protected by the house. Not to mention having chairs to perch on while looking out over Cape Cod Bay. The house is on the top of the coastal bank so the beach is about 45 feet down.

I love your property Claire. How cool to have a house high up over the beach. Fun to have the turkeys visit too.

Thanks, kendra2. I grew up here, in the summer anyway, and came back years after I'd gone off to see the world. Those chairs were my parents' favorite sitting spot. I think the turkeys would have amused them.

Thanks for the link Kathleenca. I read the posts but they address more of the cooking and brining techniques. Two posts mention taking the turkey out 45min to 1 hour ahead or making it the day before. I'm wondering if anyone can spell out for me how to reheat a carved turkey, if I wanted to have it ready say 3-4 hours ahead (so I don't have to carve (read butcher) it while any guests are here. 2 hours out is the max for food safety and I can't keep it in the oven because my sides will be cooking. If I'm doing it that early should I just go ahead and make it the day before or reheat it 3-4hrs later?

This was posted on another thread, but I'll post it again here. I like it because all the work is done ahead of time. Just add the drippings from your T-day bird at the last minute and you're good to go with gravy. Make-Ahead Turkey Gravy Makes about 2 quarts For more flavor, after roasting the turkey you can skim the drippings from the pan and add them to the gravy just before serving. It's best to discard the strong-tasting liver before using the giblets. This recipe makes enough to accompany a large turkey and still have plenty for leftovers. 6 turkey drumsticks, thighs, or wings reserved turkey giblets reserved turkey neck 2 carrots , chopped coarse 1 head garlic , halved 2 ribs celery , chopped coarse 2 onions , chopped coarse Vegetable oil spray 10cups low-sodium chicken broth 2 cups dry white wine 12 sprigs fresh thyme 1/2 cup all-purpose flour Table salt and ground black pepper 1. Adjust oven rack to middle position and heat oven to 450 degrees. Place giblets, neck, drumsticks, carrots, celery, onions, and garlic in roasting pan, spray with vegetable oil, and toss well. Roast, stirring occasionally, until well browned, 1 to 1 1/2 hours. 2. Transfer contents of roasting pan to Dutch oven. Add broth, wine, and thyme and bring to boil over high heat. Reduce heat to low and simmer until reduced by half, about 1 1/2 hours. Pour through fine-mesh strainer into large container (discard solids), cover stock with plastic wrap, and refrigerate until fat congeals, at least 2 hours. 3. Using soup spoon, skim fat and reserve. Heat 1/2 cup fat in Dutch oven over medium-high heat until bubbling. Whisk in flour and cook, whisking constantly, until honey colored, about 2 minutes. Gradually whisk in stock, bring to boil, reduce heat to medium-low, and simmer until slightly thickened, about 10 minutes. Season with salt and pepper. (Gravy can be refrigerated for up to 3 days or frozen for up to 2 months.) Reheat gravy in saucepan over medium heat until bubbling.

Garbage man took the turkey today - It's gone and I'm over it! Teresa - Butterflying the chicken is simple. Just take some shears and cut along both sides of the back bone to remove it. Flip it over, push down hard in the middle of the breast till it cracks and lays flat. Lay it on a broiler rack and pull up the legs to rest between the thigh and the breast. Here's the full recipe. It calls for putting potatoes under the broiler rack, and man do they come out tasting good! The turkey recipe used a 16x12 disposable roasting pan under the rack rather than the pan bottom so that you could fit more stuffing. In either case, the object is to have somewhere for the fat to run without smoking up your kitchen. It's a very effective trick. Crisp-Skin High-Roast Butterflied Chicken with Potatoes If you prefer not to brine, use a kosher chicken - it is salted and has a taste and texture similar to a brined bird. For extracrisp skin, after applying the flavored butter (if using), let the chicken dry uncovered in the refrigerator 8 to 24 hours. Russet potatoes have the best potato flavor, but Yukon Golds have beautiful color and better retain their shape after cooking. Either works well in this recipe. A food processor makes quick and easy work of slicing the potatoes. Serves 4 1 cup kosher salt (or 1/2 cup table salt), for brine 1/2 cup granulated sugar 1 whole chicken , 3 1/2 to 4 lbs, preferably free-range or other high-quality chicken such as Bell and Evans, giblets removed and reserved for another use, fat around cavity removed and discarded 2 1/2 pounds russet potatoes (4 to 5 medium), or Yukon Gold potatoes, peeled and sliced 1/8 to 1/4 inch thick Vegetable cooking spray (nonstick) 1 1/2 tablespoons olive oil 3/4 teaspoon table salt (for potatoes) Ground black pepper 1. Dissolve salt and sugar in 2 quarts cold water in large container. Immerse chicken and refrigerate until fully seasoned, about 1 hour. Meanwhile, adjust oven rack to lower-middle position and heat oven to 500 degrees. Line bottom of broiler pan with foil and spray with nonstick vegetable cooking spray. Remove chicken from brine and rinse thoroughly under cold running water. Following illustrations 1 through 6, butterfly chicken, flatten breastbone, apply flavored butter (if using), and position chicken on broiler pan rack; thoroughly pat dry with paper towels. 2. Toss potatoes with 1 tablespoon oil, salt, and pepper to taste in medium bowl. Spread potatoes in even layer in foil-lined broiler pan bottom. Place broiler pan rack with chicken on top. Rub chicken with remaining 1 1/2 teaspoons oil and sprinkle with pepper. 3. Roast chicken until spotty brown, about 20 minutes. Rotate pan and continue to roast until skin has crisped and turned a deep brown and an instant-read thermometer registers 160 degrees in thickest part of breast, 20 to 25 minutes longer. Transfer chicken to cutting board. With potholders, remove broiler pan rack; soak up excess grease from potatoes with several sheets paper towels. Remove foil liner with potatoes from broiler pan bottom and invert foil and potatoes onto cookie sheet or second cutting board. Carefully peel back foil, using a metal spatula to help scrape potatoes off foil as needed. With additional paper towels, pat off remaining grease. Cut chicken into serving pieces and serve with potatoes.

Lacanche Thanksgiving

catjackabby, I like your user name! I couldn't come up with anything catchy. It is the portable French Plate that comes with the Lacanche. I also have a portable grill/griddle (Nordicware) that I bought a few years ago that I also use. Someday, I may buy the Lacanche portable version, but for now the Nordicware is working just fine. I have good friends who renovated about a year and a half ago and they put in a Viking range. They were over the other night marveling about the Lacanche and asking all sorts of questions about it. Turns out their Viking hasn't worked in months. The gas range won't go above 350 degrees and they are still waiting on parts. And, they said that it's not the first problem they've had with the range. They said they would never buy another one. I had also read the reviews that you mention and ruled it out along with a few others. Did you know that Viking was recently bought out by Middleby? They also bought Aga and Lacornue. Perhaps the quality will improve with the change. Currently, my little microwave sits in a very large space under my countertop just in case I ever want to add a wall oven or a microwave/convection oven! We also plan to finish the rest of our basement in the next few years and I am sure we will put some sort of wall oven down there when we do. Be prepared, for entertaining even more! I have always loved to entertain, but I'm finding that we are doing even more, since October we've had people here at least one night each week. Everyone wants to come to our house now. I've even had a friend come and cook on Cluny. He isn't allowed to do anything but grill at his house; his wife thinks he can't cook. So, I invited him to come and cook on the Lacanche. He was so excited, I got text from him several times a week as he was planning the meal! A few weeks ago he served us a wonderful 5 course, Italian meal. Now his wife wants a go! Last week, a group of us went to Midnight Madness, a shopping event here in Ann Arbor. We were all going to go out for dinner afterwards, but I was having trouble finding a place that would take 15 of us, so I offered to have them come here instead. I made tomato soup, baked potato soup and grilled cheese. A very understated meal for me to serve friends, but it seemed perfect for the event since we'd be cold when we returned. Not wanting to stand around and make 15 gilled cheese sandwiches after everyone got here, I decided to experiment by making them in advance and putting them in the warming oven while we were gone. They turned out great, warm, still crispy and not too hard! My three daughters are inviting a bunch of their friends over to make cookies and watch movies in a couple of weeks, I think I'll do the grilled cheese again for them when they arrive. This is my first gas oven and I really like it. Elisa recommend one of each to me and we use it mostly for cooking meats and the electric for baking. We cooked the turkey in the gas oven and it was a beautiful golden brown. I roast turkeys for my dogs to eat and the other day I decided it would be interesting to put one in each oven so I can see the differences. About the range top, I do have 7 burners, the most I've ever had going at the same time by myself was 6. And I could barely manage to keep up! We got 7 because my husband and I really enjoy cooking together and shuffling things around on a 4 burner stove just wasn't cutting it anymore. I do have Carrara marble, it is honed and sealed and I really like it. Yes, it has already started to etch but they don't both me at all. We lived in England for a couple of years and I fell in love with the marble tables and countertops that I came across in our travels there and in Europe. I did get a coffee stain on it once, but I was able to get it off using a poultice. My island is planked, distressed maple and this is where we do most of our preparation work. Although, my husband seems to prefer mixing curry and cajun spices on the marble! I would definitely get it again, but I'm not fussy about keeping it looking perfect and I love the patina it is developing. I looked up the multi cooker but couldn't find anything about it on the Lacanche site. The beauty of the Lacanche is just a side benefit for me anyway. I really use it everyday and it performs amazingly!

Used to have turkeys in our back yard, but the neighbor stopped feeding them and they dwindled away. I was quite happy when I sighted four last month. I was hoping they might be become regulars and maybe come to my new feeder, but they no longer seem to be around.
My sister lives in an area with deer, turkey and bear. She says she loves seeing the turkeys around her house because they eat deer tics. There's a lot of lyme disease where she is.

Aurore: We're in lyme disease country too, and turkeys eating ticks is a big bonus. I haven't seen any ticks for a few years now.

The turkeys come and go - they stay here for a week or two then head off on what I think of as "walkabout", probably cruising the neighborhood for other food. I think that's their normal pattern in the wild. Of course, here, the other food is probably in someone else's yard - many people are fond of them.

That middle photograph is just beautiful. Turkey are stunning birds; they don't often get recognized for their beauty but your photographs really captured it.
I love how they are resting on the chairs.

Thanks, TMFF. I love watching the turkeys - I also have photos of a turkey hen and some chicks on those chairs.

Today the turkeys were back at the nyjer seed. I guess if you can eat little bitty nyjer seeds then ticks are a piece of cake. It seems to take a lot of concentration, though.

A relative of mine has them in her yard and she would be shocked to read your posts.
They have chased her , blocked her from getting out of her car and her driveway, etc. She is scared to death of them.
Different strokes for different folks as the saying goes.

Does your relative live in an urban area where the turkeys are more stressed (like people)?

I've read that turkeys can be very aggressive but I haven't had any problem here in my rural setting, and the neighbors haven't complained either. I'm more careful during breeding season when the males are hyper, but even then they seem to display in front of me (look how magnificent I am) and don't threaten me. The hens are always friendly.

Thanks, Konrad. I miss the turkeys when they go on walk-about for a few days or a week. They were missing the first three days of GBBC but finally showed up this morning, on the last day of the count.

A dozen turkeys today, the day after another snowstorm, and this tom rested in the sun behind some hollies.

I love the sun on the feathers.

Have you been able to get any pics of their babies?

I know folks in upper PA. They took us for a jeep ride one summer on their 30 + acres in the mountains.

We saw a mother and her babies. Sure wish I'd had a camera with me.

Last year there were only a few poults, maybe a bad spring or maybe predators.

June 2012

2008 was the first year I saw turkey poults and still the most. Two hens combined their broods and there were fourteen babies visiting my yard!

I saw another sign of Spring early this morning when I looked out the window and saw a turkey tom displaying. I just went to Flickr and changed the sizes back to original 640 x 480 since GW fixed the photo size problem.

This hen doesn't look at all impressed.

How can she resist my magnificence?

She noticed me!

The old magic still works....

Just a few more turkey pics now that GW has fixed the scaling issues.

Last March there were two mature toms in the yard who usually displayed together side by side. When they changed direction they would move like a line of skaters, the one on the outside moving faster than the one on the inside so they stayed in a straight line.

One of the toms was definitely dominant; the other would always defer to him and step back if necessary. Several other toms, maybe juveniles, acted very very subordinate. One didn't have the full facial snood.
