Store Bought Seeds vs. Saving Your Own

This is my first attempt at growing from seed. Last year I got a hold of heirloom varieties and saved the seed as recommended (over ripening on the vine, picking the best tomato, fermenting, and all of that). In planting up, I bought the envelope of Burpee heirloom tomato mix to get some extra varieties. They are now sprouting and I notice that the seeds I saved myself are producing seedlings that appear much more stalky and healthier than the store bought seeds. Is this typical? All of my seedlings have been receiving the exact same treatment. My thought right now is that commercial seed saving is inferior to that of saving and caring for your own seed.
