Anyone have a blend that's along the lines of Mexene Chili Powder? (I love that stuff for southwest style chili)

...or Gebhardt Chili Powder, I've never been able to locate it around here but I've heard it's good SW style also....

I'm interested to hear what ideas anyone has as well.

I never really thought about trying to replicate a commercial product. I started with a very loose interpretation of Alton Brown's recipe for chili powder. I don't know what you would classify it as. I use Anchos and whatever else I have for a medium and hot component (varies from year to year). This year I grew Guajillos and Pasilla Bajios to experiment with. Haven't tried them yet, though.

I also cast my vote for the hot hungarian wax. But, I cannot discount jalapenos, which I make poppers out of. But, I make my poppers a bit differently, with no batter and no deep fryer. Here's what I do: Cut peppers in half length wise. Depending who else intends to eat them, you may need to clean out the hot guts. Fill the halves with cream cheese that has a bit of spices mixed in. I keep it simple and use seasoned salt, garlic powder, and a bit of pepper. Wrap them in a piece of raw bacon, and stab a toothpick through to hold it together. Slap them on the grill until the bacon is cooked and the cheese has a nice light brown tinge on top. Commence eating. I prefer to dip mine in Tapatio hot sauce, but any would work. They are very addicting, and also be carfeul with the hot cheese at first. I usually sit and eat a couple dozen, or basically until I eat myself sick. The hot wax peppers I either just eat outright, or slice them up and put them in my sandwiches. They are good for dropping into pickles if you make them. Also, hot dilly beans. So simple, yet so good. Lemon Salt Marinated Pork Tenderloin Recipe courtesy Michael Chiarello 6 lemons 1 1/2 tablespoons salt 2 tablespoons extra-virgin olive oil Freshly ground black pepper 2 pork tenderloins (about 1 1/2 pounds total) Honey Roasted Applesauce, recipe follows Preheat oven to 425 degrees F. Finely zest the lemons. Using a mortar and pestle, work the salt and lemon zest together. Add a few turns of black pepper and 1 tablespoon of olive oil. Stir to blend. Rub the lemon salt mixture all over the pork. In a large saute pan heat the remaining 1 tablespoon of olive oil until hot but not smoking, add tenderloins to pan and sear on all sides, about 5 minutes total. (If you have a small pan, sear 1 tenderloin at a time.) Move pan with pork to the oven and cook until a meat thermometer reads 155 degrees F, about 6 to 8 minutes. Remove pork from the pan and let rest on a cutting board for about 5 minutes. Slice the tenderloins against the grain on a diagonal bias, fan out on a plate, and serve with Honey Roasted Applesauce. Honey Roasted Applesauce: 6 apples, Gravenstein or McIntosh 2 tablespoons sweet butter 2 tablespoons fresh lemon juice 1/2 teaspoon finely ground sea salt, preferably gray salt 1/3 cup honey Preheat oven to 425 degrees F. Peel the apples with a vegetable peeler, remove the core and cut into 1-inch chunks. Heat a medium saute pan on medium-high heat with the butter in it. When the butter begins to brown add the lemon juice and cook for 30 seconds. Stir in the apples and salt. Saute for 3 to 4 minutes until the edges just begin to color. Add the honey and put in oven for about 15 to 20 minutes until the apples are soft and lightly caramelized. Mash with a fork for a chunky version, or put in food processor for a smoother sauce. Serve warm, room temperature or cold. Yield: 4 to 6 servings Cook's Notes: Most applesauce recipes call for cooking the apples on the stovetop from start to finish. I prefer to start them on the stovetop and then finish them in a hot oven. The oven heat concentrates their flavors by drying and caramelizing them slightly. Although I have suggested a couple of apple varieties, you can use what good cooking apples are available in your area.

~*~Sister's Beans~*~ 1 lb ground beef Â¾ lb bacon (cut into small pcs) 1 cup chopped onion 2 cans baked beans (15oz size) 1 can kidney beans drained (1lb) 1 can lima beans drained (1lb) 1 cup catsup or bbq sauce Â¼ cup brown sugar 1 Tbsp liquid smoke 3 Tbsp white vinegar 1 tsp salt Dash of pepper Brown ground beef in skillet, drain off fat and put beef in crockpot. Brown bacon, put pcs in crockpot. Brown onions in remaining bacon grease. Drain, and put in crockpot. Add rest of ingredients and stir together well. Cover and cook on low for 4-9 hours. serves 6 ~*~Chicken Tortilla Soup~*~ 4 boneless chicken breast 2 -15oz.cans Black beans,Undrained 2 -15oz.cans Mexican stewed tomatoes, or Rotel tomatoes 1c. salsa 1-4oz. can chopped green chilies 1-14 1/2 oz. can tomato sauce tortilla chips 2c. grated cheese Combine all ingr. except chips & cheese In slower cooker.Cover.Cook on low 8 hours. Just before serving remove chicken & slice into bite-sized pieces. Alton Brown's Chili Powder

Ingredients
3 ancho chiles, stemmed, seeded and sliced
3 cascabel chiles, stemmed, seeded and sliced
3 dried arbol chiles, stemmed, seeded and sliced
2 tablespoons whole cumin seeds
2 tablespoons garlic powder
1 tablespoon dried oregano
1 teaspoon smoked paprika

Directions
Place all of the chiles and the cumin into a medium nonstick saute pan or cast iron skillet over medium-high heat. Cook, moving the pan around constantly, until you begin to smell the cumin toasting, approximately 4 to 5 minutes. Set aside and cool completely.

Once cool, place the chiles and cumin into the carafe of a blender along with the garlic powder, oregano, and paprika. Process until a fine powder is formed. Allow the powder to settle for at least a minute before removing the lid of the carafe. Store in an airtight container for up to 6 months.

I've never been able to find [real] cascabels here, the round ones. Some guajillo looking chiles are sometimes sold under the name 'cascabel'.

I've never had any luck using a blender to make a fine powder, have to use a coffee grinder to do that.

I haven't fooled with powders much, I usually rehydrate dried chiles and puree with a blender. I may get into making powder though, I'll have to get something better than my coffee grinder though.

I was basically using the 'holy trinity' of chiles before I had ever heard of it: ancho, guajillo, pasilla, along with de arbol, cumin, oregano (I like European best), garlic - makes a decent bowl of chili, or is a good start to a mole.

All dried and ground.
I like more Ancho , Chile Negro and cascabel in mine for Flavor.
I use the new mex etc. for heat and flavor but add some hotter peppers if I want more heat.
I'd say I use 2/3rds Ancho etc.
1/3rd New Mex types and add whatever for heat as I use it,assuming I'm who is eating what it's in.
Mexican Oregano is a must.
A touch of Mexican Cinnamon is nice too...
I don't measure stuff in general so precise measurements are something I can't post.

I am intolerant to cumin, so my chili powder mixes don't resemble anything commercial.

But just pay attention to the overtones of the chiles - some are a chocolate/tobacco smell and go great with beef. Other have a sharper, almost pine resin smell and go better with pork.

And toasting the dried pods in a dry skillet before grinding changes the taste - mellows it and drives off a bit of the heat. Do this outdoors, because that heat is air-soluble and will make it hard to breathe in your kitchen.

You even get a different taste is you soak and puree and heat versus soak and puree and add to HOT oil and lightly fry the puree first.

Garlic powder is not as good as fresh garlic added to the puree - totally different taste.
