Gobble Gobble & Pepper Jelly

This weekend is Thanksgiving long weekend up here in Canada so, Happy Thanksgiving to all you Canuks, Hosers, Igloo Occupants etc.

Turkey is in order of course AND you can't have turkey without hot pepper / cranberry jelly (what I call Turkey's Revenge). This year I did a 10 lb bird on the smoker. GF did another 18 pound bird for the majority of guests who don't like smoke (yes there are people out there with strange taste). I think I'll be eating turkey leftovers for a while!

Wow great looking smoked turkey, the jelly sounds great some hot spice does a meal good.

There was a post about hot peppers in the Poultry section of Homesteading Today that talked about hot peppers jumpstarting pullets to lay. The idea was to put a bit in the layer mash to stimulate the birds. I would be interested in your idea to add the chili peppers to keep rodents from eating the food. It sounds like a great idea. Although , I have a cat who loves hot food :) Rosie the cat can't wait for us to eat Hot wings she goes after the left overs with a vengance.

Dehydrating Peppers

Your drying time is going to vary depending on the humidity in the air where your dehydrator is. So if you are dehydrating in the kitchen and you're doing anything that may add moisture to the air then it is going to take longer. Instead of going by a strict timeframe, try testing a few pieces from different spots in the dehydrator before taking them all out. Take a couple pieces out and lay them somewhere to cool. Once cooled pick them up and drop them a few times on your counter. They should sound dry, like a clickety clackety sound or like potato chips being dropped on the counter. If they sound like that then they are dry. You can take them out of the dehydrator but don't package them for storage just yet. Put them in a bag or jar and several times a day just pick them up and look for signs of moisture condensating on the bag or jar, if you see moisture put them back in the dehydrator if you don't just shake them up a bit and let them sit. You should ideally do this for ten days if you are going to seal them up for long term storage. The shaking and waiting allows what little moisture content there is to completely stabilize so you wont have a moist spot that will mold and ruin the whole batch. I've done red, yellow, orange, and green peppers in rings and strips. They retain their color very well and so they look great in addition to retaining flavor and nutrients.

I loved reading all the ideas! you folks are very creative. Not exactly jam or jelly, but in that class of foods we make: Loquat preserves with spices (like a jam but with loquat chunks). No longer have loquat tree so my last two jars are precious. This is great on hot oatmeal or waffles. Peach nectarine butter - we got no peaches last year, but still have a jar or two. I like that one mixed with plain yogurt. I have not figured out another way to eat it, but with yogurt it is great. Marmalade, mixed citrus or Meyers lemon. They go well with toast or crackers and goat cheese. One of my favorite sandwiches is a 'grown up' PBJ version: Real peanut butter with marmalade and sliced fresh jalapeno slices. Trust me, it is good. I bring a couple of these to work every week. The reason I posted is that our most popular item in this category is our 'citrus glaze' which is in effect failed marmalade. Marmalade that did not set and remained liquid. This happened two years ago before we had the hang of making 'solid' marmalade. We gave away our 'good' marmalade, but kept the liquid stuff, since you cannot give away 'failed' stuff, right? We had made a very large batch, something like 15 quarts. In any case, two years later, I am out and I want to make more! This is by far the item that has been used the most. I use it in my zucchini muffins, in my fig bread, in many stir fry dishes, in all sorts of marinades for grilling, all sorts of sauces. The 'regular' marmalade also gets used but much less, so we still have a lot of jars from last year. I already have a huge basket of citrus and it is only January, so my next preservation project will be 'failed' marmalade. Maybe I should call it something else?

I'm not sure how people feel about linking other forums... But I have found an awesome thread RE making your own, or even improving your own soil... I do 2 parts peat (10$/3cu f), 2 parts composted black cow (~1$/40lbs), 1 part coarse vermiculite (10$/3cu), and 1 part of dirt from my yard. 2) if you are looking for seedlings, Cross Country Nursery has about 400 varieties and a fantastic reputation. When being shipped a plant, expect it to arrive in less than optimal condition, and plan to get it planted the day they arrive as well... Never the less, it will expand the possibilities over your local big box. I am not a fan of Monsanto (and GMO for that matter), and so many of the brands at your local Home Depot, or whatever are subsidiaries or clients of Monsanto subsidiaries. Which means if they ever found out you saved seed from one of their plants you'll likely be sued (if you can even get them to grow). If you are looking to grow from seed, Pepper Joe's, the hippy seed co (in australia), midwestchiliheads, and pepperlover are all good sources. Pepper Joe has a fantastic return policy... If you buy seeds, and you are not happy with germ rates, or whatever, you send him an email, and he sends you a new package of seed, and usually with a few bonus varieties thrown in. 3) all depends on your threshold for pain... If you like habaneros, Might I suggest Scotch Bonnets? They have a nice smokey flavor. A bit milder would be Aji's, I've had some yellow Aji in Peru, and it was fantastic. Cumari Pollux is reputed to taste like fruit loops with a bang. If you like stuffing peppers, Pablano's are hard to beat. If you are into the varieties that will cause your face to melt off, check out 7pot Douglah (indian for cross, and is kind of a crass impolite term from what I gather),Moruga Scorpion (but don't buy from Jim Duffy of Refining Fire Chilies... He's asking ~3$ per seed...), Trinidad Scorpion Butch T strain is the current Guinesss world record holder (though it is surpassed by both Douglah, and possibly by Moruga). There are scores of amish varieties, new mexican varieties, sweets, hots, and superhots. It all depends on what you like. 4) no idea... Not familiar with your climate or zone :). Here in Fl, I have about 200 plants in the ground, with the goal of having 400 plants of over 100 varieties. 5) I have heard that composted alfalfa is fantastic for your pepper plants, some even co-grow it beneath the peppers. I have no personal experience with it though. I guess it would depend on whether you are buying a bale of alfalfa hay, and spreading it (less good, the process of breaking it down could deplete your garden of Nitrogen, plus the extra weeding that would come with this), or if its something else. For my garden, I use bone meal, blood meal, and fish emulsions. The fish smells terrible. But its weak, and if you are applying it to seedlings that is important. I'm not familiar with round up - other than its reputation for killing mostly everything its sprayed on. Here is a link that might be useful: best soil thread ever.

Do you give out the recipe for this jelly? I would love to try it. I'll even exchange a recipe of mine for Sob's Hot Pepper Soup. You'd love it.

Armageddon, not much work at all turkey wise. A spachcoked fresh, not frozen bird on my large Big Green Egg with a chunk of hickory and cherry only took an hour and forty minutes at 300F.

See link below for chile cranberry jelly. I used Butch T's for this batch. Talk about ANGRY BIRDs. It has fangs!!!

How are you? Good looking bird there !! Hey I was wondering, last season you sent me a couple of recipes : one was for your Carribean BBQ Sauce and the other was for a sauce or salsa using the 7 pot pepper. Would you happen to remember the ones I am talking about? We lost the recipes in the move we made and I would really love to have them again if you can find them!!! Thanks so much !!!!

I thought I'd bump this thread since our Turkey day is coming up in a week down here "south of the border". I'll make some plain stuff for all the naybobs who exhibited fear when I mentioned the idea of spicy cranberry sauce, but I'm going for it! I just know it will be delcious.

A follow-up: my husband came home with a bag of cranberries already, so I made a batch of spicy cranberry sauce just by adding a few of my Ajis chopped fine at the end of cooking the normal recipe. Absolutley fabulous! I don't know if it will last until turkey day...

The turkey looks yummy. Wish I had some with my version of turkey's revenge. It would be do good as a sandwich with lettuce, onion and turkey revenge mayo.

OMG!!!! Would y'all knock it off!!!! I am dyin' here!! I keep getting these messages like 8 or 9 pm after we have already eaten and when I tell my husband about them I have to sit on him to keep him from raiding the kitchen!!!! LOL!!! Whew!! All of it sounds so yummy!!

Bill - I made a wimpy version of Turkey's Revenge. I used a mixture of Cherry & Rain Forest peppers, and slipped in one Bih Jolokia. It's very good and has just a little bite, so it's acceptable for the wife. I'm sure it doesn't have the kick of yours with Habaneros.

Hey, if you have chiles in it, it ain't wimpy!

When it comes to adding hot peppers to dishes shared with significant others, you can be right (make it as hot as you like) OR be happy ;-))
