Adding Garlic and Lime to My Hot Sauce?

Hey guys. I have a standard formula going on for my hotsauce.

i mix my crushed chiles, tequila, white wine vinegar, salt, and honey.

I want to add some garlic and lime.

Question - How should i incorporate them?

I mix those ingredients i listed above in a morar and pestle, put em in a 1pint jar, then boil them in a water bath for 20 minutes, then leave to age in a dark cubbard for 1 week.

Should i add the garlic and lime after i age it, or before?

will it go rotten?

the jars are 1pint mason jars, so they seal really well, but i dont completely submerge them to give them that airtight "popping" seal.
