what's the best way to save/store a serrano harvest?

I've got around 60 serranos....can't eat 'em all in the next week.

I read that serranos don't freeze well, so that unlike habs you can't just throw them in the freezer and take them out as you need them.

I'm thinking about cutting them into rings (approx. 4-5 slices per serrano) and dehydrating them. I'm hoping the dehydrated rings can be thrown into chilis and sauces and will re-expand as needed.

Are there other ways to store these things? if dehydrating is the way to go, would it be better to store rings, halves, or wholes?
