Roasted and Brined Jalapeno pepper recipe. Please:

Does anyone know how they make those jalapeno peppers sitting in some sort of brine at chicken restaurants? I am specifically referring to Bill Miller BBQ for you Texans. I have all these peppers and I really don't want to slice them up and pickle them. They are firm. The ones at Bill Miller seem to have been roasted first, but there are no char marks and no outer skin that is peeling off, unless they were roast first then the outer skin peeled before putting into the brining solution. the peppers are surely soft, very soft, and the pickling solution seems not too tart like a 2-1 vinegar water ratio; it almost seems like a 2-1 water to vinegar or 50-50. Does anyone know how to make these restaurant type peppers. I have all these peppers below and don't want to waste them.
