Annie Cider Brined Pork Roast

Annie I did a search for your cider brined pork roast,but didnt find it.It sounds really good.I just got a jug of honeycrisp apple cider at fresh market and would like to try the recipe.TIA

I'd be happy to, Shelley. It's my favorite way to cook pork roast and it's really good for chicken too. Courtesy of Cooking Light, it's a standard now in my family.

APPLE CIDER BRINED PORK ROAST

3 cups apple cider
3 cups water
1 bay leaf
Â¼ cup salt
1 tbls black peppercorns
1 tbls coriander seeds
1 2 lb. Pork loin, trimmed
2 cups cider
1 Â½ tsp chopped fresh rosemary
1 Â½ tsp chopped fresh sage
1/8 tsp freshly ground black pepper

Combine the first 6 ingredients in a saucepan and bring to a boil, stirring until salt dissolves. Remove from heat, cool, and pour into a Ziploc bag or container big enough to hold the pork loin. Add pork, seal and let marinate 8 hours or overnight.

Preheat oven to 350, bring 2 cups cider to a boil over medium high heat. Boil until cider is thickened and reduced to Â¼ cup, about 15 minutes. Set aside. Remove pork from bag or container and discard brine. Place pork on broiler pan or baking dish and lightly coat with cooking spray. Sprinkle with remaining herbs and bake about 1 hour, until pork is done, basting twice with the reduced cider in the last 20 minutes of baking. Remove from oven, baste with remaining cider reduction. Let stand 10 minutes before slicing.

Serves 8

200 calories per 4 oz. Serving, 6 grams fat

And just to make up for the fact that it's a healthy recipe, we usually have mashed potatoes, brussels sprouts and apple pie when we have this, LOL.

Thanks for the quick reply.That sounds great,on the menu for the week ahead.I dont think I'll waste my $6.00 1/2 gallon of honey crisp cider on this,will go back to fresh market and get some that is less expensive.

From my files. I hand this out when I teach classes.: FRUIT SYRUPS I use this all the time with great results. Syrups made from blackberries, huckleberries, raspberries, boysenberries, loganberries, sour cherries, and Island Belle grapes as well as mixtures of berries are of good flavor, color, and consistency (thin like maple syrup, medium thick like corn syrup, or slightly jelled). Syrups can be made with or without pectin and lemon juice. Lemon juice may improve color. Use of pectin will vary consistency. To Prepare Fruit Puree: Sort, stem, and wash ripe fruit or thaw frozen unsweetened fruit; crush fruit thoroughly; measure crushed fruit. Add 1 cup boiling water to each 4 cups crushed fruit and bring to a boil. Reduce heat and simmer to soften--about 5 for soft fruits...about 10 minutes for firm fruits like cherries and grapes. Press through sieve. SYRUPS MADE WITH PUREE 4 cups puree 4 cups sugar 1/2 package or less powdered pectin (if desired) 3 or 4 Tbsp lemon juice (if desired) 1. Mix puree, sugar, pectin and lemon juice. 2. Bring to boil and stir for 2 minutes (boil till jelly thermometer reaches 218F). 3. Remove from heat, skim off foam, and pour into 1/2 pint or 1 pint jars to within 1/2 inch of top. 4. Adjust lids and process in boiling water bath canner for 10 minutes. 5. Remove from canner and cool. 6. Check lids, label, and store in cool, dry place. To Prepare Fruit Juice: Sort, stem and wash ripe fruit or thaw frozen, unsweetened fruit; crush fruit thoroughly. Place crushed fruit in dampened jelly bag and drain. For clearest juice, do not press bag to extract juice. For firm fruits, heat is needed to start flow of juice. Add about 1/2 cup water to each 3 cups crushed fruit. Bring to a boil, reduce heat and simmer 10 minutes. Place hot fruit in dampened jelly bag; drain. SYRUPS MADE WITH JUICE 4 cups juice 4 cups sugar 1/4 cup lemon juice (if desired) 1/2 package or less powdered pectin (if desired) 1. Mix juice, sugar, lemon juice and pectin. 2. Word of caution: check your turkey before brining. Make sure it hasn't already had salt added in some form. We always brine our turkey and this year we are using the following recipe, minus the star anise pods. Cider-Brined Turkey with Star Anise and Cinnamon "Brining the turkey overnight keeps it moist and seasons the interior of the meat," says Lo. "The ingredients, except the cider, are classic 'red-cooking' flavorings used in Chinese cooking to braise and glaze meats like pork or duck." Tent the turkeyÃ¯Â¿Â½especially the wingsÃ¯Â¿Â½with foil if it darkens too quickly while roasting. Yum, venison - the other red meat! We've been on a venison kick for the last month making room in the freezer for this year's supply. Our favorite ways to prepare it: Tenderloins - wrap with bacon, crust with cracked pepper, sear quickly and serve with a pomegranate/red wine sauce or my new favorite which is an elderberry/port wine sauce. Stew meat - venison stroganoff with brown crimini mushrooms. Venison Meatloaf 2 pounds ground venison 2 pounds bulk pork sausage 2 medium onions, finely chopped 1-1/2 cups cracker crumbs or bread crumbs 1/2 cup evaporated milk 3 eggs 1 cup barbecue sauce 1 teaspoon salt 1/2 teaspoon pepper 1 can (8 oz.) tomato sauce 1. Saute the onions, add the meats and cracker crumbs and mix well. Add the next five ingredients and 1/2 cup tomato sauce and mix well. 2. Put in greased baking pan after shaping into a loaf. 3. Bake at 350Â° for 30 minutes. Top with remaining tomato sauce and bake for 1 hour longer. We butcher our own, and we save the front leg roasts for sauerbraten (which we are having tonight, BTW). Cube steaks - my mom used to take a cube steak, pile on some stuffing mix (I think a Stove Top type stuffing would work), wrap it up with a strip of bacon around the middle and secure with a toothpick. Then she'd put the stuffed cube steaks into a loaf pan, add some consomme or onion soup, cover with foil and cook in the oven. Apple smoked venison kielbasa - take a piece and use it in red beans and rice. I would think a boar ham would be great marinated with some cider and a splash of apple cider vinegar much like Annie's cider brined pork and roast it with apples, onions and add some sauerkraut. It's been a while since we lived in an area overrun with javelinas, so I'm a bit out of practice. Can you tell I love venison?

Sour Cream Rye Bread from "The Bread Lover's Bread Machine Cookbook" by Beth Hensperger, (2000) Havard Common Press, Boston, MA page 139 2-pound loaf 3/4 cup water 2 1/2 tablespoons balsamic vinegar 7/8 cup sour cream 3 TBLSP dark honey or molasses 3 TBLSP vegetable oil 2 1/2 cups bread flour 1 1/2 cup dark rye flour 1 1/2 TBLSP instant potato flakes 1 TBLSP + 2 tsp. gluten 1 TBLSP + 1 tsp. caraway seeds 1 1/2 tsp. ground coriander seeds 2 tsp. salt 1 TBLSP bread machine yeast or 2 1/2 tsp. SAF yeast Add wet ingredients and then dry ingredients into loaf pan in the bread machine. Use the standard setting. I bake mine in the bread machine but you can use the dough setting I guess. If using the bread machine to bake, set the crust on medium. Beth says the loaf is delicate when coming out of the pan so remove carefully and cool it standing on its side. I left it in the bread pan overnight to cool so didn't notice any delicacy taking it out. Lpink's notes: I used low fat sour cream and some non fat greek yogurt since I was almost out of sour cream. I drastically reduced the caraway and corriander. I used crushed caraway since I don't like seedy rye. I think I only used about 1/3 of both for the recipe. The flavor was still good with just that amount. I also used somewhat less salt, again maybe 1 1/2 tsp. I used half honey and half molasses for the sweetener. I also used some whole wheat bread flour in place of the plain bread flour, but not a whole lot, like maybe the equivalent of 1/2 cup for this recipe.

LOL, Shelley, I agree. I've even been known to use (gasp) commercial apple juice and it's still good, but the cider reduction isn't nearly as good with just plain juice.

Fresh market had some other fresh cider that was $3.00 a 1/2 gallon,so that should work lust fine.Cant wait to try it.That honeycrisp cider is wonderful,not as good as yours,I'm sure.thanks again,Annie.

Has anyone tried this brine/marinade with a Turkey?... sounds like it may be WONDERFUL.......

I've got a pork loin in the freezer that I'm going to try.... but I LOVE me some good old turkey.

Just following up to say that DH & I loved this recipe. Took Annie's lead and served it with Brussels sprouts and mashed potatoes. An outstanding weeknight dinner!

Wow! I wanted to follow up, too, and say I fixed this for dinner last night. The family LOVED it! It's a keeper! I'll bet it's good, as you say, with chicken! I'm going to try that next. We had a mixture of wild rice as our side, with a salad and some bread. Next time, I'll try the Brussels! Thanks Annie!!

OK, I'm finally recovering from the flu. Yup it was the H1N1 "swine" flu, now I have an awful hankering to eat a pig!

I guess I'll have to make the pork roast myself, LOL.

Annie, that's almost funny (about eating a pig)! I'm glad that you are recovering.

I have taken the H1N1 hype with little attention--until Beau got very sick last week. That caught my attention real quick. He lost 4#s which, as you know, is a bunch for a 5 year old.

I made this last weekend and we loved it too. I had homemade applesauce with it. Yum!

The best part was that the package of pork had a label on it showing pink pork and a little note indicating that you could now eat pink pork as long as it is cooked to 150. I had to make my Mom read that because she refuses to eat any pork if she sees the slightest hint of pink. This was sooooo tender cooked medium. I loved it. She would only eat the end pieces though. Old habits die hard I guess.

The funny thing is that she will only eat her beef very rare so it is strictly a pork thing. And then she always complains that the pork chops I make are too tough. I try to tell her to eat them medium, but noooooo. LOL

Woodie, when you toast at Thanksgiving when you're having pork it's a no brainer...just say "oink oink". That's what my son used to say to my daughter if she had a second helping. She was not fat by any means but what can I say, she was a girl.!

I thought I had bought a package of pork loin at Costco and when I opened the package it was two of those little pork tenderloins so I just tied them together and made this recipe. It was really good.

I agree, I think darned near any cut of pork you have that is of a size to marinate would be good....

Another question before I make a big mistake. I don't have coriander seeds, but ground coriander. Question is, would it be best to leave it out or to use a small amount of "ground"? If I remember correctly, coriander either way is rather expensive so I really don't want to have to buy seeds. I've never used it in any form.

Jude, I've used the ground and don't like it as well, I'd leave it out.

The herb coating is more coarse, kind of "cracked", and the powder just didn't seem to mix in as well, somehow...
