drying peppers on plant in New Mexico

I keep seeing food programs, when they go to New Mexico and let all their peppers turn red, then dry on the plant. Now this isn;t those hatch or Big jim peppers that are picked fresh then roasted or put in green chile. These are a small kind of chiles. The question I want to know is--how do they let the plant die, because that is what is happening; every plant has turned brown with leaves shriveled. Do they stop watering it? I know this is the desert, but it does rain in Santa Fe New Mexico. Do they clip the plant at the main stem to kill it? This was a very odd practice but everyone there did it in the show. I don't know the time period to brown plant, but the peppers when picked were red and beautifully dryed.
