Dried vs Fresh Names?

Chipotle = Smoke Dried Jalapeno.
Ancho = Dried Poblano.

Is there a list like this somewhere that's a little longer? :-)

A lot of them go by the same name, fresh or dried. But, this might help. Click on the links of each chile for more info.

I'm finding that out as I'm looking for a list myself. I may just start keeping track of them as I find them. Thank you.

The info from NCHFP was very interesting. Rosemary, I'm sorry you felt as if you were being singled out. The responses were not intended as rude, especially from those specific people who replied to that post. They were merely pointing out that altering approved recipes changes the equation, which is also what Dave was referring to when he asked if the NCHFP reply also knew of your decision to double. I'm sure if you called and asked your extension office would tell you the same. Substitutions, additions, or assumptions based on a different recipe have the POSSIBILITY of having dire consequences, not an automatic death sentence. It's all dependent on what level of risk you're willing to assume. I'm sure the recipes are tested to be much safer than the absolute minimum, so as to not cause issues with inadvertent oopsies. People on this forum were right to correct a tip that could mislead other people in the future on something that might be a much bigger safety issue--who knows who might read that thread in two years. They do it to educate and help, not to put people down. Personally, I have learned so much from being a part of this forum and am grateful. Aside from safety issues, another reason to not increase herb/spice quantities is that they change flavor over time in the jar. Many herbs are really best with just a short (or no--basil) cook time, and longer just brings out bitter notes. I just opened a two-week old jar of apple butter that was amazing at canning time, but just that period has changed its flavor, causing the spice to become nearly overpowering.

A rule of thumb is 1/3 the amount of dried if the recipe calls for fresh....but that's prime quality, recently dried herbs...if the dry have been around a while, use more...if the fresh were picked a week ago and kept in the refrigerator, their flavor is less, if the season has been rainy and warm, the basil tasted different. It's NOT chemistry! No one ever said when tasting a serving of coc au vin.."Oh!! Wow! You used 1 1/2 teaspoons of fresh thyme leaves!! Amazing...I* have only tasted it when it was made with 1 teaspoonful!" There no equivalants that you can take to the bank...you better learn to taste as you go. Cooking is an art, every time you make something it will be slightly different, unless you develop that skill that allows you to "remember flavor" and correct seasonings to make the dish taste just like it did the last time you made it. Food is not a chemical reagent....every chicken is slightly different, every steak, every onion...albeit very slightly, most of the time but none the less. Check on some of the baking threads. Sometime you can make perfect bread....and another day the bread falls on it's face using the same recipe. The flour was different...or the air... Cooking is not objective...but rather subjective. I grow my own too. Like arosegirl, it's in among the lilies, and iris. I always stip the seeds off when it goes to seed. It makes the bulbs larger. Then I harvest some of it in August. I love the fresh the best. I have a Pampered Chef garlic press too. And a little rubber tube that peels it really slick. Leslie

Squashing some misinformation above... cows in feedlots don't have "large amounts of antibiotics". If you think that, then you don't know what antibiotics are for, or how highly regulated they are. As well, you don't know what antibiotics are if you believe they are "fed to these animals" or if you think antibiotics somehow "help them gain weight on less feed"... I didn't read the rest of what you posted because clearly you speak of things you do not know about. Thank you to all else for the helpful information, because what I was looking for was about the difference between dried manure and composted, not some hit-piece on feedlots (which I have nothing to do with, but I don't agree with false information being loosely passed around, especially when it makes farmers look bad... because a farmer, I am). If you'd like a little fact of the day... you will not EVER eat meat or drink milk that is raised in the USA, that has ANY antibiotics in it, organic or not. This is a FACT. These things are the most highly regulated commodities in the United States, and there are withholding periods specifically so that no antibiotic is ever in the product for human consumption. This is dangerous information to spread around. As well, it is a FACT that these things are not just generously pumped into animals... like your dog, when a cow gets sick, it may get treated with an antibiotic (like penicillin, just like what us humans get in the hospital) to make that cow not sick anymore. It is not something that helps them grow, it it not something that is ever used in large amounts or if not needed, and it is not something us humans will EVER consume from food produced in the USA. I've always seen that chilaca is the fresh equivalent of Pasilla (dried) but I grow Pasilla Bajios... so... I just wish there was a bit more consistency in the chile pepper world. ;-)

in the judo world, people complained about lack of consistency when naming techniques, and competition rules from region to region. so some people got "in charge" and standardized things. and now all we talk about is how much we hate the things the people in charge have done. sometimes a little bit of chaos is better than the alternative. but nobody realizes that until they experience the alternative.

"Pasilla" in Spanish just means "dried and wrinkled" so each region has its own "chili pasilla" depending on what's popular there.

Look at the shape and color: Chilacas are long and ribbon-shaped, tend to dry very dark. "Ancho" (Spanish for wide) are wide and taper like an arrowhead, dry to a deep reddish brown.

I've looked for a comprehensive list also... haven't found it. However, a dried smoked jalapeno is a morita... isn't a chipotle until you stick it in adobo.

I found this interesting as years ago all I knew (Or thought I knew.) was smoke dried Jalapeño were Chipotle but also known as Moriata? But if you type Chipotle Pepper in GOOGLE almost all results have Adobe Sauce or the individual word?

Morita is a particular kind of chipotle; usually pretty small and quite dark. They are dried quickly .
