To prune or not to prune?

I have two plumeria overwintering in pots in my garage. They have not dropped all their leaves, and the larger one was still blooming in January. I have never pruned or cut them back, and the larger one is probably 6 feet tall. Too tall for me to really see the flowers when it blooms, and it's prone to faling over in high wind. Should I cut it off along the main trunk and hope I can root the top successfully? Would this greatly lessen the chance of it blooming this year? Wold it be wiser to take a smaller cutting to practice rooting and do major cut-backs in the fall of this year? It's done so well, I hate to mess it up now...
