I make them using JR Slick's recipe from the Harvest Forum, which I think is the same thing as the standard Ball Blue Book bread-and-butter pickle recipe, substituting jalapenos for cucumbers. I do include all the spices and do use onions. I've never used pearl onions but think they would look lovely. I've always used white vinegar because that's what he uses. I suspect the cider vinear would give a slightly different flavor.

I've never made Candied Jalapenos with pickled jalapeno slices, but can't think of a reason it wouldn't work if you have a recipe that calls for the use of the pickled jalapenos. The only one I've seen before involved pickled pepper slices, sugar and water.

I like to mix in red jalapenos for color when I have them or even use the orange Bulgarian Carrot peppers to add more color. Right now I'm using both Bulgarian Carrot peppers and red jalapenos mixed in with the usual green jalapenos.

I'm sure the person you're making these for will love them and appreciate the time and effort that you put into them. At Christmas, Tim's coworkers are so excited when they get them.

I'm sure you probably already have JR Slick's recipe, but I'll link an old thread that has the recipe in it, in case someone else here wants to make them too.

Yum! Ok, now I have to make these this fall when I will hopefully have plenty of jalape�os for a few jars. Dang, as cheap and nice as jalape�os are at the market right now, I just might have to buy five pounds and try them right now!

Thanks for bringing this up, Seedmama, and thanks for the recipe link, Dawn. One thing that's doing fairly well in our garden is jalapenos, and Larry loves them and loves bread & butter pickles, so I'll definitely try a batch of these!

In reading various threads about the Candy Jalapenos, I found one person who mixes really hot Jalapenos with Fooled You, the no heat kind. He says it keeps life interesting. Gotta love the sense of humor. For the intended gift recipients, I'll be using hot, hotter and killer. If I can ensure against air pockets I'm also going to include Purple Jalapenos that have ripened to red. They are tiny and so so pretty without being sliced. I'll cap them, then make sure their cavities are filled with brine.

Every year we give about 90 or 100 of Tim's co-workers at the PD Christmas gifts from our garden, usually in the form of salsa, canned peppers in various forms, jams and jellies. The Candied Jalapenos are very popular. If someone was hoping for some and doesn't get any, they practically cry. Tim always calls to ask me if I have a spare jar hidden away that he can give to someone. lol

Hey, I am still plant sitting your hibiscus and a few others I set aside for you. I can keep them until the middle of August, but I can't guarantee any survival after that. I'll be out of town and my plant caretakers aren't quite as avid as I am about watering. I'm hoping hurricane season will be up and running by then and we get natural watering....

Why wait for the Spring Fling? The pepper jelly recipe is linked in another current thread. Lightweights eat it with cream cream and a cracker. Me? I eat it straight from the jar with a spoon!

Hmmmm, we have sweet banana peppers and serranos too. Maybe adding just a serrano or two for extra heat and then some sweet bananas would give it an interesting flavor?

And speaking of serranos, those are out-producing all the others, so if anyone has any recipes or hints/tips for using those, please share.

Although I normally use jalapenos in Annie's Salsa, sometimes I substitute a couple of serranos (as long as you don't change the total amount of peppers in the canning recipe, you can use whichever peppers you want) for some of the jalapenos to give the salsa some extra heat.

You can dry them or freeze them and use them in cooking throughout the year.
